I canned this after watching your Canuary video! I just opened my first jar this week and made an onion and mushroom gravy using my canned mushrooms, mashed potatoes from my canned potatoes and home canned green beans on the side. This was the first meal I've cooked since I had major back surgery 3 weeks ago. There's no way I could have done it if I hadn't had everything canned already! AND it was delicious!! I used ground beef since that's what I had, but I can see why you'd want to use pork if it keeps more of its texture. The beef held together in patties but it did lose its 'chew'...I don't really know how to describe it other than that. However, no one complained about it at all. I had enough to send next door for my mom who is in her late 70's, and she raved about it! I'm so glad I have these on my shelf! Thanks again for sharing the recipe. 😁

Over the weekend, after seeing your process for canned Salisbury Steak, I got a meat grinder attachment and a big ‘ole pork butt. So happy to see your jar to plate video!!

I agree with you, sometimes beef doesn't always hold up. So I'm going to try these with ground pork and bake the patties in the airfryer oven. Then can them. Thanks

Thank you so much for the follow-up. Getting the canned ingredients to the table is the most important part. It’s not only what makes canning practical, it’s what makes it palatable.

Linda, I just tried the meatball version of this today. Holy cow are they delicious (I had one jar not seal, so I had it for lunch)! I can food for my elderly parents so they don’t have to cook. They’ve got eight pints of this coming their way. Thank you for the inspiration for me to try this recipe. I never would have thought cloves and cinnamon belong in meat. Instead of merlot, I used my homemade onion cooking wine. So good! This is a phenomenal recipe and I will be making it again. Thank you! My best to you from VA.

Linda, after seeing your video making the Salisbury steak I ran out and got everything I needed, except the store was low on sausage. So I made a double recipe with 3# ground beef and 5# Jimmy deans regular sausage. I also use the same broth. Turned out great! I agree ground beef comes out weird from being canned, I think it ends up tasting like the meat in Chef Boyardee cans. Anyway none of that with the ratio I did. It's so good in fact I've already picked up the meat to do it again so I can send some to my son's apt. Thanks for a great recipe!

Hello Linda! Do you have a link for the jar opener you use? I agree on the taste and texture difference in canned sausage and ground beef patties. I have 5 pints of hamburger patties that I am going to chop them up to use in spaghetti sauce and chili. My family didn't care for them as hamburgers or in patties in gravy. They are fine with the canned crumbled ground beef used in recipes that are saucy or cheesy.
