Kashmiri Chilli Powder - 2 Tsp (Buy: amzn.to/2vg124l)

Method:
1. For the masala paste, grind curry leaves, green chillies and ginger together coarsely in a mixer jar and keep it aside.
2. Now take rice flour in a large bowl.
3. Add chana dal soaked in water for 1 hour. Also add the ground masala paste.
4. Next add salt, turmeric powder, Kashmiri red chilli powder, cumin seeds, sesame seeds, hing and unsalted butter.
5. Mix these all well.
6. Next pour hot boiling water into the bowl gradually and prepare the dough. Keep it aside closed for about 10 minutes.
7. Heat oil in a wide kadai.
8. Spread some oil over a banana leaf and place a portion of the rested rice flour dough. Gently press it evenly by moistening the hand with water at intervals.
9. One the rice cracker is flat and nice with medium thickness, drop it in the hot oil and fry until it is golden brown in color on all sides.
10. Remove it from the kadai and cool it down. Prepare all the rice crackers Similarly.
11. Once they are all fully cooled down, store them in an air-tight container for 4-5 days and enjoy.
DESCRIPTION
Rice crackers is a south Indian snack popular in all the south Indian states. However each preparation style differs in each state. These are crispy crackers which are mainly made with rice flour and the native condiments. These rice crackers are very tasty with a simple yet wonderful flavor. This particular recipe doesn't contain onions or garlic so if you are someone who follows vrats and other special days, you can happily binge on these crackers without any guilt. These crackers stay good for a good 4-5 days easily. So after you fry them, cool them completely and store them in an airtight container. This is a traditional, good old recipe that's been there for generations in the southern part of India.
