Just taken these out of the oven a hour ago and they’re the best thing I’ve ever made. They are so delicious and fluffy. I only had a long tray so I made them in to 2 rows of 4 and it was great. Thanks very much for your recipe. I tried one that turned out more like a scone. So many of the recipes have just too much sugar and butter but these are just great proper soft rolls. Thank you !

Came across you in 2020 lockdown for corona virus, ran out of bread rolls and our household decided to have a BBQ so I set to and made these rolls. I did a white batch and a wholmeal batch and they were the best rolls I have ever had! My two grown up kids thought they were delicious and my husband wants me to make them again- which I will. Thank you for the inspiration.

nice buns Keef. got a little tip for you. if making them in winter time like it is over here at the moment, you can use the oven light only and place your dough in there to make it rise. it works a treat. cheers.

Spoiling us with yet another great cooking video. The only thing I do different is mix the warm water, sugar and yeast together and leave for about 10 minutes to help get the yeast active. But everyone to their own, the bread still turned out amazing! Thanks for uploading Keef.

Looks lovely, I wonder cud you try painting a bid of egg yolk on it. When I was little I used to get the bread early in morning from the back of the bakery and I saw them do it. What do you think?

I generally do glaze pies and things with beaten egg, but for this one I wanted a really soft finish, not anything that might bake crispy.

To stop dough sticking to your counter, spread out some parchment paper (or use a silicone mat or a cutting board) and flour the surface. you can spread flour on the counter directly but that involves more cleanup.

I didn't want to oil or flour the worktop because it would affect the composition of the dough. I only got a little bit of sticking when I was making up the rolls, and I can live with that.

Hi Keith I made these today and whilst nice mine have turned out a little bit spongy,any idea why this has happened,my dough was quite wet so added more flour,could this be why?

When I was younger I would get home from work, Put the Oven on Full, Wash hands and a big Potato, Put Potato in Oven and set timer. Put Kettle on, Then I made my own bread for my bread rolls to take to work the following day. I had it down to an art. Four, Dried Yeast and Salt in a bowl and quick mix, Jug with 1/3 Pint of boiling water topped up with 2/3 Pint Cold water from tap. (Correct Temp). Pour Sunflower or Vegetable oil in to just cover the top as it floats. This was then mixed, kneaded then put to raise on top of the cooker, Make cup of coffee, After 30 minutes knock back the dough, Shape and put on a baking tray and put back on top of Cooker and cover with Tea Towel. When the Potato was cooked it came out and the bread went in. (Set Timer) I would put what I wanted on the Potato and eat it and when the timer went off I would turn the Oven off and open the Oven Door half way. The bread stayed in there until next morning. It was normal for me to work 6 days a week and on the 7th I cooked proper meals, Being single about once a month I would invite the neighbour over and cook a Full Roast Meal.

Bread flour has more gluten in it so you get a better rise and texture. Regular flour wouldn't really work.

In Leeds where I live they're called 'breadcakes'. Not sure why, cakes != bread. In Kent where I'm from they're called 'rolls' or 'buns'.

You use strong white bread flour. I am not sure what that is in Australia. Will just plain white flour be OK?

Strong flour, or bread flour, has a higher gluten content that gives the bread its chewy texture. If you use ordinary flour it will likely have a more crumby, cakey texture. I really wouldn't recommend regular flour for this - but I'm sure you'll be able to get bread flour fairly easily in Australia. Good luck!

I love my breadmaker. Every time I do hand kneading my wrist hurts. I use dough cycle and bake bread in the oven. Breadmaker is such a great tool when you don't have a standing mixer.

(Texas is NOT a hotbed of British cooking) (Grins) Second, you enjoy your own cooking as much as I enjoy my own. Third, You seem to like cooking for your wife as much as I enjoy cooking for mine. if you have a convection oven you don't have to turn the pan around for 5ish minutes. The fan in the oven circulates the heat evenly. Also for 9 cuts I don't see why you needed to measure them by weight.

With a breadmaker, you can put in the ingredients in the evening, and awake to the smell of baking bread. I still like the oven method though.

self made bread is always better then the store kind. the thing you use to mop the butter really is not the best thing to use a brush or a cloth mop would be better for cooking.
