As a single guy, and not a very creative one, I often struggle with what to cook throughout the week. I probably spend more time staring in the fridge than I do actually making something. I have to say that your recipes are simple (even for an amateur like me!), don't take too much time, are very tasty, and most importantly use quality ingredients. Since most of my recipes come from online, you've saved me a ton of time, so I just wanted to say thank you!

Do you by chance think that roasting your chicken in the oven first, peeling the meat off the bone, and then making stock from the rest exactly the same as your recipe is a good option as well? I like to use the meat for like tacos, enchiladas or chicken salad sandwiches and then use the rest of the bones, meat, cartilage in the stock.

+Keean Morishita Of course! I have had followers who have even made my stock recipe using the leftover bones from a rotisserie chicken and had great results! The extra roasting will add even more flavor for sure.

So I tried this. The stock tasted very good compared to the regular one's But it went bad within two days. I stored it in an airtight container in the refridgerator. Any tips?

+Aaron Ryder I'm suprised it only lasted 2 days. May I ask, did your stock gelatinize? I tend to leave a bit of fat in mine which when refrigerated hardens on the top of the stock. That somewhat protects it. It should last a good 5-7 days but every chicken is different and has a different fat content. Normal light stocks will only last around 3-4 days in my experience. All I can suggest is to freeze it immediately if you don't plan on using it right away. Sorry that happened to you! 🙁

Dang that sucks..I agree freeze it after it's cooled down and it will stay good for a long time. Super easy to defrost too.

I removed the fat as much as I could. I think it's the chicken. I Will try it out with some other chicken

That could be it. Some chickens are just not great. I made a stock once with a chicken using the exact same method I always do and it just tasted so bland. Higher quality ingredients definitely make for a better quality stock.
