Intriguing! It always astounds me how cheap food here in germany is, compared to other countries as well as compared to our income. A 750g box of corn flakes here is around 1.5 Euro / 2 canadian dollars. A kg of flour is about 30 cents here.

Bdw if you blend your batter it becomes smooth and runny that u just have to pour it to your baking tray and let gravity level it out by guiding the runny batter around the tray. That way you have a thinner and Crips flake and the batter is consistently and even distributed. Instead of sugar you can opt for honey too. Bdw cool recipe

trying this now. only had 1/2 cup cornmeal left. and added the 1/2 of water and 3 tsp sugar 1 tsp salt was pretty watery so I added 3 tsp corn starch was enough for my halfsize sheet. in oven now🤞hope it works

Perfect! I just experimented with a chicken nugget recipe with a request from my husband to add a cornflake batter on the outside. Now I can do this with cornflakes I make myself so they can be less sugary and even made from some corn I want to grow myself eventually!!

I'd recommend glazing them with powdered sugar and water instead because you run the risk of burning the sugar... been there tho :C

Great recipe. One slight difference with store bought flakes is that they’ve been vitamin enriched and the reason for this is the phytic acid in the corn, prevents the body’s absorption of iron, zinc and other minerals. So vitamins are added otherwise people would be unhealthy from eating the food if it wasn’t.

I think if we use jaggery powder or dates sugar or any other healthy alternative for refined sugar and rock salt instead of that normal salt we can actually make this meal healthy. By the way, great video.

IMHO, the best way to flavor corn flakes is to add a touch of malt powder and leave them in the oven a little longer so that they get toasted, just like Post Toasties used to make. The other way is honey, brown sugar & sunflower kernels like Sun Cruncher cereal back in the 90’s. Here in New Mexico, we’re blue corn abound, I’d love to try this recipe with blue corn meal 😋 Thank you for this 🙏 🥣

You can make them faster by soaking corn kernels in water under high pressure for a few hours until moisture is at 20%, then crushing the kernels into flakes, and adding sugar saturated water solution and drying.

You can add wheat bran and it works great, but semolina absorbs way more water than cornmeal. Be sure to use the finest grind semolina you can find and expect to add more water to make it spread. Enjoy! :)

Just made these & I’m impressed! I initially 2x my recipe w/ 6 Tbsp of Sugar (used Organic Cane) but mixture wouldn’t mix well & sank to bottom of bowl so I 3x recipe & my mixture looked like yours. I used 2 baking sheets (should used 3). I added 2 more Tbsp of Sugar to remaining Cornmeal mix w/ tiny bit of water. The end result tasted just like Cornflakes. Super Crunchy, but had excess Cornmeal on them & were slightly thicker. Next time I’ll make batter thinner by using 1 baking sheet per recipe yield. Also, place finish Cornflakes in a strainer to shake off excess Cornmeal before storing. Otherwise you’ll end up with lumps of Cornmeal at the bottom of the cereal bowl.

Wow! The original recipe that inspired this called for 1 cup cornmeal per baking tray-plus the sprinkling! I found it way too thick. I might try it with no sprinkling. I love the sifting idea; yeah it’s pretty powdery...all the more reason to omit sprinkling? Enjoy! :)

Yes, sifting is mandatory 😉 Next time I’ll decrease the sprinkling mixture to 1/2 the amount on 1 tray & omit on the other to test the difference. Can’t wait to try this again! & Glad there’s another use for Cornmeal! This recipe is a keeper!!
