Hey Everyone!
When I canned the sausage and potato soup the other day I used my homemade chicken stock/bouillon paste and a few people asked me if I had a video on it, as my jar was getting low, I made a fresh batch up so I could share!
I use my Thermomix to make it and used a Cookidoo recipe, but there are plenty of versions of the same recipe free all over the internet, Quirky Cooking has a good one! and I'm sure with a little adapting that it could be made using the stove top and a food processor, it is just so simple in the Thermomix!

I have snipped a touch of the video out when editing! I added the salt to the bowl just before the Bay Leaves at about 9min 5seconds! the salt bowl is full and then empty but I didn't show me putting it in the Thermomix! Sorry!

@@future.homesteader it is 150g salt to the 600g veg/meat. You can reduce it and add salt to your dishes separately but being that high in salt is what helps it stay scoopable in the freezer :)

@@OurSmallFootprint Thanks 150 grams of salt for the full amount of stock paste still works out to be lower sodium than most bouillon cubes. Besides, this is much better quality ingredients than bouillon cubes, Better Than Bouillon, etc. & for families like mine with multiple major food allergies can be customized so it's allergy safe for everyone in the family.

@@future.homesteader yes, definitely and you can use the quality salt you wish to use, but some people get turned off it, those people also prob don’t realise how much sodium is in a lot of the stuff they eat every day!

It is well worth its price point imo, its an investment, but I use it for so many things! I don't have a second bowl for this new model one which is frustrating lol, I'll have to buy one once I get this all paid off, but I did have multiple bowls for my older model and it works wonderfully to have many things on the go and just swap the bowls out!

I have made the veggie stock in the thermi - it is quick, easy and delicious. So much nicer than store bought. I'll definitely make the chicken one!!

I use it every day pretty much lol, for something, maybe not making a meal in, but for processing in some way! It is my second set of hands in teh kitchen :D

I make all the stock paste and love them, I use chicken the most. I dehydrate it as I’m more likely to use it as a powder but omg it takes forever to dry.

@@tammieharrison316 There's so many things I'd love to dehydrate that just take that little bit too long to be feasible for us currently! I really want to try building a solar dehydrator though, computer fan and netting etc. A freeze dryer would be awesome too, but again, power :S

With a lot of thicker foods (ex mashed potatoes, cooked pumpkin, cooked mashed beans, etc) it's actually quicker in total time to thin it down to a pourable consistency. Then you can pour it into thin layers on fruit leather trays so it dries much faster.

I'm shelling peas as I watch, that's a labour of love. Lol. Great video. I've tried reducing the salt and it freezes solid, if I want to do that again I'll use ice cube trays . Thank you for sharing lovely 💜

I think the Thermomix would make an excellent wedding or Christmas gift! If I still did a lot of cooking, I'd get me one.However, since moving in with my daughter, I only cook on occasion.

Hehe, it definitely makes it easier, streamlines the process, but I'm sure it could be done without with a little tweaking, but I think every kitchen owner deserves a Thermomix lol :D

My daughter's friend somehow was gifted 2 brand new thermomixes and was originally trying to sell it for $1000 but is now thinking of reducing it to $500 due to now buyers (we live in a rural town). All I can say is I wished I had a spare $500 laying around to take it off her hands 🙂

I've never tried Better than Bullion, it is highly touted as a good one to use though, do you think they compare ?

@@OurSmallFootprint better than bullion is good and it really does help zip up a broth or soup or whatever you use it for. I like the longevity of the product, I just opened one and the expiry is June 2024 I’ll keep it in the fridge and it will be fine . When I made my own it was not as long lasting and it was to salty for me. Also it’s hard to get the flavour to be stronger. The better than bullion roast chicken flavour is all I buy. I know I won’t get the same use from beef, vegetable, mushroom or seafood base. It is also safe as an additive to add when you make broth for canning.

@@newbtuber333 As most of them are, unfortunately, This homemade one works wonderfully but it does lack a bit of the umami of the storebought, I was actually wondering if some Miso mixed through might be good, maybe some of my mushroom and/or bacon salt as well, I think I'm going to have a fiddle with the next batch.

You can totally do a vegetable one yes! I’ve done it on the stove before and the only thing is to keep it moving, you don’t want to burn anything and add that burnt flavour, so stand with it and keep it moving while cooking :)

Yes, it has 150g of salt to 300g Chicken, 300g veg (though I bump up my veg ratio, storing it in the freezer). You can make it without salt, but you must store it in the freezer and it freezes solid, so in ice cube trays works well! :). Super handy to have in the freezer! :D

Yes, a friend messaged me earlier and said that she thinks I didn't add the salt, I went looking over the footage, and it looks like when I edited out the noise of the machine mixing I cut a little section out! It is just before the bay leaves, so with the herbs and chicken at about 9min 5 sec, you can see the salt bowl is full in front of the machine and then as I'm talking about the bay leaves it is empty, so I must have snipped a little too much off at that point!

Hi Nyssa, I just ordered a TM6, but I'm a little concerned as to whether its noisy or not. Do you consider it to be noisy? I have a noise sensitive 4yr old, I can't use a blender or a vacuum if he's in the room. Love your channel ❤ Kat.

I would say when grinding or milling etc, yes it’s quite loud, but general cooking etc, no, it’s just a low hum/swish sound :)

Hi Nyssa, do you happen to know if it's cheaper to make your own stock? And also do you think the cookidoo subscription is worth it? I just got a TM6 and been informed that i would have to subscribe before the 28th to lock in the current price.

I think that making your own stock paste, or stock in general is cheaper if you are using stuff you already have, if you go out and buy all the stuff to make it, not so much, but I keep off cuts and all my bones for bone broth stock, and I try and use the ends of veggies and scrap meat etc for the stock paste, and then that way its not an outlay its part of the cost of everything else, if that makes sense! I'm a little on the fence about cookidoo, it isn't particularly useful for me, I like to browse it, a bit like I browse recipe magazines, but I don't 'use' it a lot, however, I do love the idea of the meal planning and then shopping lists and even exporting to online shopping all from the app! That is really neat, not something I can use. I think that cookidoo is very similar to a Thermomix in general its worth it if you mindfully use it, some people buy a Thermomix and then it sits on a bench and never gets used, they don't see the value in it, because its a change in process/way of cooking to get the most out of one, I think cookidoo is similar, if you don't normally cook from recipes, but you want to get the value out of it, you need to mindfully make that effort! In saying that, I did put auto renew on mine, so that I lock in the price and then I can decide when its due to renew if I do or don't heh.

It surprised me that the thermomix recipe uses the chopped meat rather than bones/scraps etc. I don't want to spend more and have to do the work as well.😆 Yeah I'm not able to use the online shopping either, I don't live near a woolies. I'll have to think about how much experiementation with new recipes I actually want to do I guess. Do you save your own recipes on there? I'm pretty sure you have to have cookidoo to use that feature. I can see what you mean about mindfully using it. It's definately a different way of cooking and it would be easy to just keep doing things as you always have and wonder why you bought it 😅 I have to say though even just using it as a blender so far has been awesome it's very efficient and the self cleaning is really good. I just wish it was big enough to knead enough pizza dough and bread dough for the family. I'm bad at remembering to strech and fold.

@@sewathome my understanding is you have to have a current cookidoo sub to save your own recipes on there because that creates the link between you and the tmx, but I’m actually not 100% positive on that! I still write notes and recipes down lol. My kids do like cookidoo though, but because we’re dairy free and I tweak things… lol I use my kitchenaid for most doughs, but I do use the tmx for flatbreads and and found 800g flour / 500g liquid is about max that it can handle. Which isn’t bad for such a compact size.

Thank you so much for this video. I want to try this but I don't have a Thermomix. I'm thinking I will cook things down, then blend in my Ninja. I'm on the edge of purchasing a Thermomix. When is your last day to sell the initial 6? Have I missed it?

I think its definitely doable without, jut a few more dishes and a little more hands on to make sure nothing burns etc! End of the month is my cut off :). I love mine and think everyone should have one lol, but only if it is suitable for you! :D
