Ok, I've watched this video several times and finally made these tonight, what was I waiting for? These things are SO good my mind is blown. I see 41 down votes, must be 41 people who don't like tortillas, I'm 56 and feel like I've never had a tortilla before tonight. Also, I'm feeling much more comfortable with the higher hydration dough too, going to revisit your English muffins and see if I can't get better results. As always, thank you sir!

I was horrified looking at grocery tortillas ingredients: - Enriched wheat flour, Wheat gluten - water - canola and modified palm oil and palm oil kernel shortening - baking powder - sugar, salt, vinegar - potassium chloride ( E508) - calcium propionate - fumaric acid (E297) - guar gum - modified cellulose (E4xx as E460, E462, E466 etc..) - potassium sorbate (E202) - vegetable mono- and diglycerides (E471) may contain milk Just google for Exxx

Hello Yung Boxer, It is nice to meet you. Warm flour tortillas will always be soft, tender, and pliable. Stack and wrap he freshly griddle tortillas in a clean kitchen towel. Keep warm to serve. Baking powder is a leavener and is used to lighten the texture of the flour tortilla when it comes into contact with the heat of the griddle. Hello Phyllis, This is a quick bread using baking soda as the leavener. No need to use yeast to create light and fluffy Flour Tortillas.

What is the difference if you add or omit baking flour? How will the recipe result change?

Hello Dianna, The Baking Powder is a chemical leavener that lightens the texture of the flour tortilla when heated on the griddle. Without the Baking Powder the flour tortilla will be dense and heavy and not as pleasurable to eat. Thank you for taking the time to write and have a great day!

Hello Cerita, Yes, you can use vegetable oil, light olive oil, or butter to make the Flour Tortillas. The texture will change a little bit but they will be soft and delicious!

Hello Celeste, It is good to meet you. Make sure your using water that is at least 130°F (54°C) when adding it to the flour mixture. The thickness of the tortillas doesn't effect the softness rather it is how long the tortillas cook on the griddle. The tortillas should cook on each side for about 1 minute and should have nice golden brown to middle brown spots on each side. If the temperature is to low the tortilla will have to bake to long which will dry it out. Please let me know if you have any other question. @@foodlover3036 The water weight is divide into the flour weight (284 ÷ 422 × 100 = 67%) The fat will cause the dough to be sticky but as you knead and rest the dough it will become less sticky. My tortilla come out not light and billowy... What am I doing wrong...mine are not puffing up.... I went to an authentic Mexican restaurant in San Antonio... Thiers were PHenomenal....they were soft like cotton... Are these supposed to be the same if made correctly?

Hi Morgan, The flour tortillas should be soft, fluffy, and tender. There are three factors that have an impact on the final texture. The first is the fat used. Lard (pork fat) or shortening aka "Crisco" (vegetable fat) are preferred for the tenderizing effect of the gluten. It is really important to work the fat into the dry ingredients before adding the water. The second is the temperature of the water. The water should be at least 130℉ (54℃) when added to the dry ingredients. I use my microwave oven to heat the water and check the temperature since the water from my tap doesn't reach that temperature. The third is to not add any extra flour while kneading the dough. The dough will be sticky at first, but will gain strength as you knead. If you add flour to the dough you will change the recipe making for a drier stiffer tortilla in the end. It is ok to use flour when rolling the tortillas out as this flour is not worked into the dough. If you do each of these steps and your tortillas will always be soft and tender. I lived in San Antonio for 15 years and loved that I could walk to my neighborhood mom and pop Mexican Cafe "Taco Haven" and get fresh flour tortilla breakfast tacos any day of the week. I followed the recipe exactly, measured the ingredients using grams and even used a thermometer to reach water at 130, but my dough never became smooth and constantly stuck everywhere. And I kneaded forever! I even put it in a mixer with a dough hook to see if that would change anything but it never became smooth, what happened?

Hello craftycupcake24, It is nice to meet you. Gosh, I understand sticky doughs can be frustrating. The hydration of this dough and the fat content makes for a very sticky dough. I would recommend kneading the dough on the work surface for 3 to 4 minutes to incorporate the ingredients fully and then scraping the dough off of your hands into a mass. Covering the dough with the mixing bowl let it rest for 15 minutes. This gives the flour time to hydrate. When you return to knead the dough you should find it easier to work with. I would also recommend to only use the palms of your hand to knead. You can see how sticky the dough is in this clip. Hi Joop, Butter will work for the recipe but for the best results and flavor, I would recommend using rendered pork fat called "lard" (reuzel) if that is available to purchase in your markets. I have the same cast iron pizza pan and I love it. It doubles for a baking stone in the oven, too. I like using 2 T. of bacon fat added to whatever fat I'm using. For me that's usually shortening but lard or veg oil will work, too. The bacon fat just gives it a mild extra taste boost.:o)

Hello Jr Y Maria Torres, There are a few factors that affect the tortillas texture, softness, and formation of bubbles in the dough. 1. Rub the fat into the dry ingredients really well. This helps to tenderize the dough making the tortillas more soft and supple after griddling. 2. Use water that is at least 130℉ (54℃) when added to the dough. 3. The dough should be soft and sticky when we are kneading it. I highlighted this on the recipe on my website: (NOTE: Do not put any flour down while you are kneading. The dough will be sticky) 4. I recommend weighing rather than measures the ingredients. Weighing is preferred when baking. This will help ensure the best results each and every time we make a recipe. was enjoying the video until i saw each dough ball being weighed. That was too much detail with the weighing for my enjoyment. Why didnt you show digital thermometer showing exact temp of water?

Hello Dale, It is nice to meet you. The great thing about making the Flour Tortillas is they can be cut into different sizes as they are cooked separately. I have found as a baking instructor it is helpful to have the students have a consistent size when learning to roll the dough into a disk of the same dimension. Feel free to use any thermometer that you can calibrate to test the temperature of the water. In the video, I use my old school chefs thermometer I've used for the past 30 years. Making tortillas is an art. I've been trying and trying to make corn tortillas and flour tortillas and watch so many videos on KZbin. But I could never get it right. I finally found a small step I have been skipping that made a huge difference. I am so happy today I actually made a batch of corn tortillas and they came out perfect. Now I need to learn how to make flour tortillas.

OF COURSE!!! I looked all over KZbin for a good Mexican tortilla recipe, and it never occurred to me to look to my Mexican Rice guru for a recipe! Here's the thing: cast iron cookware is almost impossible to find here in Costa Rica. Could not using a cast iron griddle or skillet be the reason why the tortillas I've tried making so far don't bubble up and stay soft after they're cooked?

Hi Miel, The key to making soft tender flour tortillas is to use hot water (130°F or 54°C). After all the other ingredients are well blended add the hot water and mix well and then knead. The pan you use doesn't really matter as long as it evenly heats up. I hope this helps you. Please let me know if you have any other questions.

I tried this recipe and no fault of it, my dough shrank back up after pressing it out. Is this a sign that I did not knead it enough? Also, it did not bubble up when cooked? and they were hard vs soft. Thanks for any help!

Hello ejcsds, I have a few questions for you if you don't mind. Did you weigh or measure the ingredients? What type of flour did you use? What temperature was the water you added to the recipe? Was the dough wet and sticky? Did you add any extra flour to the dough? With these questions, I will be able to evaluate​ what happened.

Water was over 130, weighed in ingredients, flour was Pillsbury, no extra flour added and yes it was sticky. I discovered that one thing was, my baking powder was outdated. So I made a batch with just flour, water and salt. Turned out better. I need to get some new baking powder

I made a batch with 350 gr flour, 65 gr fat, teaspoon salt and I think 190 gr hot water. Let rest for 15 minutes but they would shrink. Let the mixture rest over night, and they held size this morning. They even bubbled some, so I am thinking I am on track, but need some new baking powder! Also, would love for them to be real thin, is this just a rolling out issue?

Hi ejcsds, The proportions you gave me for the flour and water are different than my recipe. As with all baking recipe I recommend you weigh the ingredients for the Flour Tortillas. Weighing ensures you have a consistent dough each and every time. As bakers, we are always striving to remove any variables from the process of baking. If the dough retracts when you are trying to roll them just cover them with plastic wrap and let them rest for 15 minutes before continuing to roll them out. You could fry the flour tortillas or you can brush them with oil and baking them on a sheet pan at 350ºF for 14 to 18 minutes or until crisp. The flour tortillas will have a crisp & chewy texture. If you are looking for a crisp crunchy shell I would recommend frying corn tortillas instead. Have a great day!

I believe what you made are not tortillas. I believe they are called laffa bread. Tortillas might have a higher fat content.

The recipe for flour tortillas in Mexico originates from the Europeans who brought the ingredients and recipes to the new world. So it does not surprise me to see similarities to other flatbreads that come from Northern Africa, Spain, and Italy. There are slight variance between recipes. Such as lard being used to replace other fats like olive oil. It is fascinating to me to see the culinary influence left behind as countries where ruled by others. I appreciate you taking time to comment and bring up this point.

They are tortilla in Mexico, chapati/roti in India/ sada roti in the Caribbean just to name a few names for same/similar breads. No one culture has a monopoly.

I don't remember where I purchased the rolling pin for tortillas and the pin doesn't have any markings on it. The size is 18-inches long by 1-1/4-inch in diameter. The pin is made from a hardwood such as oak or maple. I hope this helps you in your search.
