This method looks quite simple, although there's still a lot of work and patience involved! My grandmother used to wrap the dough around the filling and somehow it didn't fall apart. The traditional filling in our family was an edible rose jam ("konfitura z róży" in polish, it's more refined and has intense flavor). Mmm that was some magical stuff.

These look great :) however, traditional Polish pączki are made with a bit of 95% alcohol (called „spirytus”) in the dough and fried in melted lard ;)

We don't have spirytus in the US. The closest thing you can get to is Everclear. Other than that, rum, whisky, or vodka can be substituted if Everclear is not available to you. They do the same job. And, yes, some people will fry them in lard, but now it's not that popular to do. Don't feel you have to. Use what works.

Hello The Heimburger Cooks, It is nice to meet you. Yes, I pinched and formed the scrapes into a rectangle and divided into 6 pieces. (see the video time stamp: kzbin.info/www/bejne/a2i3n62VdtGZr8U ) You definitely can add fruit like apples or pears to the dough to make fritters. If you use a wet fruit like cherries or berries it can cause the fat to splatter and pop when you fry. Please let me know if you have any other questions I may help you with. @@JustOneBitePleaseGreat video. Actually traditionally you should use pork lard - nowadays we use 50/50 combination of canola and lard. Fat Thursday used to be last occasion to eat and use up (before it spoils) all that was prohibited during lent - that is why original donuts were savory - meat filled, made with lard and with very eggy dough - sugar was rare those days. In time donuts became sweet. Also the most traditional filling is rose hip jam. Also strawberry jam and advocat flavoured pastry cream are amongst more popular flavors. Traditinally there is also around 40% less filling than what's on your video. Also in most donut recipes rather than rum we would use flavorless high content alcohol (it's added not for the taste but to keep the dough from absorbing too much fat during frying - don't know how effective it actually is). Also frosting (icing sugar+water/milk) with candied orange peel is as popular as powdered sugar.

Hi ...I had a doubt ...how do you store the donuts ..because I have noticed that after some time ...the icing sugar coating disappears and becomes a sticky mess ...anyway to avoid that ?

Hello Charishma, The doughnuts are best within 2 days after they are made. If you want to make and store them for later I would recommend wrapping in plastic wrap and freezing the doughnuts after filling (fruit filling only) without the powder sugar. Thaw the doughnuts at room temperature and reheat on a parchment lined sheet tray at 350℉ (176℃) for 6 to 8 minutes to crisp and dry the surface of the doughnuts before sprinkling with powder sugar and enjoying! Hi Joop, It is good to meet you. Using All-Purpose Flour rather than Bread Flour produces a much more tender Polish Doughnut. Hello Muhammad, Fermentation starts the moment the yeast hydrates and comes into contact with its food source (flour). The dough is "Bulk Fermenting" until it is shaped into the final shape and then it called "Proofing." The dough needs to "Prove" it is ready for the oven by growing to the optimal size before being baked. Mixing yeasted doughs varies based on the recipe, the method of mixing, and one's own personal preferences. My method is a two-step method. First Step: Combine the liquid ingredients, yeast, (other ingredients like sugar, eggs, honey if called for) and half of the flour and then beat together to make a thick batter-like consistency. Second Step: Add the remaining flour and salt to the batter mixture and folding and stirring to get a shaggy mass before turning out of the bowl to hand knead. I still use this method with stand mixers to ensure the ingredients are full combine before kneading in the mixing bowl with a dough hook. Please let me know if you have any other questions. Hi I weighed everything as in your recipe. I think there were not enough eggs. When I look at other Pacski recipes they suggest more eggs. Do you think this is the problem? Anyway, thanks for your recipe

Hi emmyjay53, I am more than happy to help evaluate what caused the dough to be dry. I do have a couple of questions for you. • Were large eggs used in the recipe? Each egg weighs about 56 grams (56 g. x 3 = 168 g.) The eggs and milk together weight 508 grams (168 g. + 340 g. = 508 grams) This makes the dough hydration 70% and this is not including the rum. • Was the dough moist and sticky when you first started to knead it like in this portion of the video? kzbin.info/www/bejne/a2i3n62VdtGZr8U • If the dough was sticky was any extra flour used during the kneading process to help it not stick? With your answers, I'll be able to understand what variable could have affected your outcome.

Here is the link to the pastry cream (custard filling) recipe on my website. It is at the bottom of the post: justonebiteplease.com/2012/12/04/im-so-stuffed-chocolate-cupcakes/ + Here is Blueberry Filling Recipe: Blueberry Pie Filling: 1/4 cup Cornstarch2/3 cup Granulated Sugar1/4 tsp. Sea Salt (finely ground)3 pints Fresh Blueberries (frozen blueberry that have been thawed completely can be used also)1 Tbsp. Lemon Juice4 Tbsp. Butter (room temperature)In the 4 qt. saucepan combine the cornstarch, granulated sugar, and sea salt. Stir with a rubber spatula to combine. Add the fresh blueberries and lemon juice to the saucepan.Using the rubber spatula, slightly crushing the some of the blueberries to release their juice and then toss and fold the blueberries until the dry ingredient are moist and coat the blueberries.Add the butter to the sauce pan.Place the saucepan onto medium heat and slowly bring to a full boil while stirring from time to time.Boil and stir the blueberry filling for 2 minutes.Remove from the heat and place into a clean bowl.Place the filling into the refrigerator until it has cooled completely before filling the doughnuts. 1 part whole milk and 1 part heavy cream. It is commonly used in coffee here in the United States and is sold as half & half. A whole vanilla bean pod that has been split and scraped. The other option is to use 1 tsp. of vanilla bean paste.

Dude these are delicious. Like super delicious... but theyre definitely ponchki shaped churros xD. The dough for ponchki (excuse my spelling plz) is much heavier, these were light and airy. I want to reiterate, these are the best damn churro based dough I've ever had.

Hello CanadianHoneybadger, It is nice to meet you. You bring up a good question. Yes, there are similar ingredients in the recipes but the Pączki recipe is an enriched yeast dough that needs to be fermented and proofed before frying. Where a Mexican churro recipe is a Pate a Choux (Milk, Water, Butter, Salt, and Flour cooked in a pan and then whole eggs are beaten in) The batter is piped from a pastry bag directly into hot oil to fry. Baking is interesting in that with variation of proportion of ingredients, techniques, and process we can create something completely different. Hello E, There are many Dark Rums available such as Myers's Dark, Gosling's 151 Rum, and Captain Morgan. You can use any liquor you like for the recipe with good results.

I know I have told you this before but I just cannot explain my excitement when you post a new video. You are such an inspiration to me. I work to get as good with dough as you are. Hopefully, one day I will be as good as you. I have been looking for a donut like dough to work with lately and I will try your recipe. I have a hard time dealing with dough that is that sticky. I need to have more patience. I hope you will post again soon. I wanted to tell you that I also got the courage to finally make some videos of my own. Maybe one day you could check one out.
