Hi, I was so excited when I saw what this week's recipe was. I have been dying to make these at home, but got frustrated being unable to find graham flour. I just made the graham crackers a few minutes ago! Awesome, lovely smell, added cinnamon and tasted great. Wish I could share with you guys. the scoring and skewering process was actually not cumbersome, I think the rolling out process took more work, but that's just me, I guess. Thanks again, Stephanie!

Terrific! I love how you give instructions in "American" & metric measurements since Americans can't (or won't) seem to learn the metric system. I'm a US nurse, so metrics is a no-brainer for me. Yes, buying graham crackers would be easier, but in May 2020, we're in lockdown, so let's go for homemade!

A couple tips--add a tablespoon of vodka and it will prevent excess gluten development and make the dough more pliable and easy to roll, and then it will all evaporate out during baking. Also, put a silicone baking mat under your parchment while you are rolling and it won't slide around. And if you are using the vodka trick, it will be plenty soft to roll out on a silicone mat.

@@janerobinson9157 It works for any recipe where you aren't reliant on the gluten structure to support the leavening. So something like graham crackers or pie crust is perfect. I also use a bit of vodka in most of my deep fry batters. I often use it in crepes as well if I want to produce an extra lacy texture and it doesn't need to hold up to heavy fillings. The places you don't want to use it would be in yeast breads, quick breads, pancakes, etc.

Here's a thought, learned this years ago. In order to get the correct thickness use pottery slates. I have a friend of mine (a wood worker) who makes me 3/16 by 15" inch slates (a set of 2) and they work great for cut out cookies and would work great for crackers too. Uniform thickness without the hassle. Ü

Made these tonight. Could these be the best thing i ever baked? Yes and i have baked a hundred cakes cookies including macarons, croissants and more. Turned out perfect. My two tips: dough is very thin so instead of trimming away for clean edge , just fold it in on itself using the parchment. Also when refrigerating keep top parchment loose not stuck on the dough. Thanks for the video. I was holding out for graham flour and now I know there was no need.

I make your NY cheesecake regularly. There are no graham crackers in Spain. I use digestives as you recommend in that video, but the ones I have leave a pool of some kind of oil in the baking pan. I'd like to try this recipe for making the crust, just to have more influence on the quality of ingredients. Should I just roll it out flat and bake it without all the designs and then crumble it, or can I just use the raw dough in the cheesecake pan and have it bake with the cheesecake itself? Thanks.

If I was going to make Chocolate instead of cinnamon would you suggest replacing a small amount of the white flour with the cocoa? I'm not really sure how to go about it. EDIT: Don't take out any flour, just add 65 grams (same as the white flour) of Cocoa powder and use 1/4 cup of milk instead of 2 Tbsp. Mine turned out great with nothing else changed. Yay! Baxter is my favorite! I love the recipes too, though!! :) Never ever thought of making graham crackers at home! I'm definitely going to give this recipe a try. I make cheesecake alot and would love to try it with a homemade graham cracker crumb base. I find sometimes the store bought ones can have an almost stale taste, so this is great! I am probably in the minority here, and I like to go the non-traditional route, but, I use a manual pasta machine to roll out the dough, and use a round serrated cookie cutter for the shape. Pretty sweet. You have good cm conversion skills, by the way!

If you can't find wheat bran, then you can substitute with 1 1/2 tablespoons (about 13 grams) of cornmeal (polenta).

Whole wheat, whole wheat.. you can ORDER Graham Flour and have some on hand. Does ANYONE know ANYONE who makes authentic graham crackers with REAL graham flour? It's a BIG DIFFERENCE in flavor, pallet remainder flavor, texture, the whole thing. And, BTW Joy, I haven't found REAL graham crackers at the store either, maybe I missed ORGANIC true graham crackers and will hunt more but nothing else is like homemade, as you know😍. Well Thank You Joy for the video but this time, the words regular wheat flour is all I need for now, lol. Please order Graham Flour, there's many wonderful recipes that call for it.
