The recipe makes about 3.5KG Sausages
∙ 2.1kg Pork shoulder meat
∙ 0.9kg Pork back fat
∙ 30 grams of fresh garlic (6 large cloves)
∙ 350 grams of cheddar cheese
∙ 400 ml water
∙ 150grams Jalapeños (7 large)
Spices
∙ 70 grams of sea salt
∙ 30 grams of Onion powder
∙ 10 grams of Cumin seeds
∙ 12 grams of black peppercorns
∙ 5 grams chilli flakes
∙ 10 grams dried oregano
∙ 8 grams cayenne pepper
