A tip to peel the almonds: after the hot water, rinse and wrap them in a clean kitchen towel, rub them with it and the shell will come off super quick instead of pinch one by one.

I'd recommend that if you want a smooth marzipan you blend the nuts first before mixing in the sugar. The moisture from nuts mixed with sugar makes it all sticky and it's difficult to blend.

You can also add 1 tbsp of brandy and freshly squeezed lemon juice each.

Can I also do this with roasted almonds? Edit: The answer is no, I tried it and it tasted like peanut butter. Maybe you could roast them for a shorter time, but you have to make sure the bitterness goes away or else it is still poisenous. So I don't recomend doing it with roasted almonds, just use the sweet ones.

Instead of using 100% roasted almonds, use a smaller percentage. Make a mixture that's 90% regular almonds and 10% roasted, and then if that's not to your liking you can add or subtract roasted almonds.

600gms of almonds and 420 gms of sugar will give you 1.020 kgs of marzipan. ;)

Raw, when you soak them the skin will become soft and easily peel off.

put it in the fridge in a nonstick sealed container for easy removal, buy a bit more almonds then resume.

You can buy anything kitchen, household or garden-ish real cheap at garage and estate sales. Pennies on the dollar. Plug them in to make sure they work and check that all the parts are there. I bought a brand new $500 mixer for $20 (it was a weird European brand); no one even knew what it was because the beaters were mounted on the top instead of being a KitchenAid.

You can eat it immediately it is delicious and healthy sweet ,you can colour it and make shapes like vegetables ,fruits, and you can cover a cake with it like fondant

It literally says "use immediately or store it for up to 2 weeks". You can use it whenever you want, but after 2 weeks it will start to go bad.

Probably because the nuts are moist, they could eventually get moldy or start breaking down. The ones in the store probably have chemicals to prevent this

Yes, equal part almond flour and icing sugar, you can swap almond extract for rosewater, but remember how powerful rosewater can be. Start with 1cup of almond flour and 1 cup icing sugar, then add 1 Tbls of rosewater and 1 Tbls of water. Pretty classic German Marzipan profile. Mix dry ingredients on a board, make a well in it, add liquid, mix until smooth. Adjust rosewater + water to your liking.

This is an incomplete recipe. KZbin has way better ones if you look up Mazapan (yes spelled that way) of Spain.

@@waterbearer6331 I find almond extract adds a weird synthetic flavor that I notice in all commercially made marzipans. I prefer making it myself without it and have to true almond flavor. I found the reason online: "Almond extract is made from peach and/or apricot pits will not be labeled "pure," and will not have almonds or almond oil listed as ingredients. ... Artificial almond extract owes its almond-like flavor to a chemical called benzaldehyde, which is made from chemicals in an industrial setting." Thats why its a weird flavor.

Both Bob's Red Mill and Trader Joe's make super fine almond flour too, further simplifying the process.

I'll have to catch a plane from Sweden to the US of A to buy some! 😉 I can actually buy some here but I normally put some flaked almonds into a grinder when I need almond meal. I actually steep and infuse flaked almonds in hot cream and a bit of sugar when I make an almond panna cotta to go with a home-made cherry jelly. Happy New Year.

@@mercoogs Alternatively take a trip to the old Hanseatic League port of Lübeck, in northern Germany, and sample the many delights of marzipan in the the shops, market stalls, and even the museum of marzipan. Lübeck is the world capital of marzipan and is a very charming place to visit.

Real marzipan contains raw eggs. Either the white, the yolk or whole depending on the colour required. The sugar kills any bacteria in the egg and is safe.

@Ichigo Red Nonsense. Raw egg does not need to be pasteurised. Been eating marzipan made with raw eggs since i was two years old. And surving into my seventies with no effects. And been making my own marzipan with raw eggs for the last forty years.,Again never ever had any issues, and the dozens of people who have eaten my maripanned and iced cakes have never had any ill effects either. Sugar and salt are both used as preservstives. Its why jam keeps so long. Look it up.

@Paul Moore Some people (like my son) are allergic to eggs but still like to have tasty treats. SO I appreciate the eggless recipe here. But then some people are snobs with no vision who must see every recipe done a certain way.. I guess you fall under that category..

Not a snob. Just pointing out real marzipan is made with eggs. And not need fir pasteurised. Of vourse some people are alergic and this recipe is a suitable alternative. But you however, are really rude.

@@pdcmoore not all countries have the luxury of clean and healthy eggs. Where I live getting sick from raw eggs isn't that unusual. Saying nonsense to that shows you regard your anecdotal evidence more than other people's circumstances

You can use marzipan AS fondant, but you don’t need fondant to make marzipan.
