I love watching your videos! You remind me of my Dad. He could do everything from growing and harvesting his own food (plant and animal) to preserving and curing it all to making delicious food. He was a great cook and knowledgeable in many other things. He also had a special relationship with God.

P.S. my husband also will not let me buy store bought anymore. Thanks for teaching me Mayo. Works great on Fried egg breakfast sandwiches he had 3 this mourn. Again THANKS man. Now for the farm and fresh eggs.

Sorry l spelled it wrong! Even with these word machines, l am still talented enough to misspell!. Mayo on french fries is a French favorite! Mayo is hard to make, in the old days we had to make all our condiments. Just watch the beginning scene of Meet Me In St. Louis! They were making ketchup! Thanks for showing your skills, Al. FYI: If you add one tablespoon of whey to your homemade mayonnaise it will last three to four weeks in the refrigerator. Stir it in after you make the mayonnaise. Don’t use the immersion blender to add the whey because it will make it too thin.

Great way to make mayo. I have a wand and I use the Wand to make mayo in the province. Thanks for the suggestion of adding mustard and sugar. God bless America.

Awesome . Trying to decide which food processor to buy. How well in makes mayonnaise no longer a criteria. Ease and time saving is why I want a food processor but you showed it’s not always the case. Thank you so much for your comparison

I always make homemade mayonnaise, Try Coleman's Dry Mustard, I add garlic and smoked paprika. We love it sandwiches, and grilled chicken. if it ever breaks on you add put some of it in another jar or bowl add another egg whole or yolk blend it till it thickens then add it back to the original jar and blend it in.

When I was little, I used to drizzle maple syrup on my BLTs and fried bologna sandwiches🤣😂I haven’t done. That in years but I want a BLT with syrup! Happy Maple Syrup weekend! Haha...

Thanks for making this video. I didn't know mayo would be that easy to make. I like your idea of sweetening with maple syrup and thinking pickle juice instead if vinegar might add a bit too. Just a bit of pureed roast Jalapeno too. I think I could make that - thanks again.

I only had a food processor plus my own eggs. Never thought of using yolks only. I liked the idea of the emolsion blender because I always stirred it in ball jar. Maple syrup, mmmmmm. We always had that because my neighbor tapped the trees :). Here also had a homemade saw mill in his back yard so I had all the slab wood I could haul away for my wood stove. I was truly Blessed!

Instead of an Emulsion blender I just use my $2 thrift store immersion blender. I quit using sugar in mine precisely because it made it taste more like store bought Miracle Whip. I also like to add a teaspoon of mustard powder if I have it on hand. You can also add a touch of cayenne pepper or garlic powder or onion powder or all of the above to make a very tasty dressing. I always use whole eggs and never just egg yolks. Even with store-bought raw eggs I have never ever gotten sick. I always use apple cider vinegar in mine. Another trick if you don't have an immersion blender or an emulsion blender or a food processor you can still make mayonnaise with an ordinary blender. In order to make drizzling the oil easier I would just use a disposable plastic cup with a skewer hole punched in the bottom on top of the blender. Just pour in your 3/4 cup of oil and let it drizzle through the middle portion of the blender cover and turn on the blender.

Yep, I love using my emulsion blender to make mayo directly into a jar. It's so easy! I like to put fresh basil in it.

Good video. I found yolk only that sometimes emulsifying was tricky. The answer is one yolk and one whole egg. Also olive oil is fine with a virgin or light olive oil. Cut back the salt with olive oil.

I do not have a full food processor and use the immersion attachment for chopping. I only use my blender for ice - which is designed for it - so no cleanup. I use the immersion tool for everything else. I usually can clean it with a spray bottle of water and not waste anything (like a smoothy.) A few squirts is all it takes. And ... that's my life.

this has been the trend here for quite awhile, restaurants, diners, food trucks are making there own mayo, ketchup and aoili’s. i was raised on best foods (hellmans) so that is the taste i have come to expect.

This is to much of a coincidence! I have been trying different mayo recipes. Thanks for the tip on thickening. I was having an issue with it. I used sunflower oil, didn't like it. I used canola oil I liked it better. Next time I will try the avocado oil. You know with the vinegar, the fresh eggs, and the lemon juice in it I question the shelf life, you suggested. I think it will keep longer than a week! I know it will, mine is 2 weeks old and we are still eating it. Thank you so much for sharing this!

Wow another great, awesome video. Talk about comparing in a side by side test. Great idea, and a great use for extra eggs. I know even our small flock of hens gave us far more eggs than we could use. I like the food processor as I do not like wasting the egg yoke. I do like the mustard in the mayonnaise though. Al, you are a good salesman. I may try my emulsion blender next time. I may have to buy another emulsion blender. Mayo with maple syrup, how new and great and idea us that. Al, what will you think of next. Oh, I heard the little comment of adding hot sauce. Remember, Texans love hot sauce. I can almost smell the BLT, homemade mayonnaise, home grown lettuce and tomatoes and home grown bacon, and your homemade bread. Al, you are about the luckiest guy on the planet. Gotta love it. America needs more guys like you. (By the way, we use human dishwashers, and often wash our dishes in cold water). Made some mayo using the immersion blender today. I was surprised at just how much oil I needed to get it to set up. Also, can totally understand using a flavorless oil. I used Olive oil and there's a very strong Oliver tester to it. (But, I like that flavor. So it's ok!) 😎 Going to make Tuna melts for lunch with it. YUMM!

I never noticed a difference using whole egg or mostly/ only yolk! Gotta add garlic though 😎 Blender any time, less cleanup!! You got it! If you like more yellow even with whole egg, add a pinch of turmeric.

hey guys! when i got home with your eggs after your hog harvest class last fall, i made the most delish mayo. it was sooo good! i use my immersion blender, yolks, avo oil, fresh lemon juice, etc, and some garlic, chives and dill. it was great on fish and it made the best potato salad i've ever made! we're getting excited to come back to your place for hog harvest 2.0 in a couple weeks. and i'm looking forward to making mayo with my own homegrown eggs! ....is the snow gone yet? i gotta get looking at property and get homesteading!

Don't wanna spoil the mood, but you should have added the oil way slower. That helps with the emulsification proces and greatly improves the texture. It should take somewhere around a minute to add all of your oil with the batch you're making. Hope this helps

Back when Maple was a part of my diet my mayo (made in a blender with whole eggs) was maple and rice vinegar and a light oil. Often added garlic and black pepper, occasionally dried mustard. Now, I'm raising hens for eggs again and my mayo is lime juice and honey with a lighter olive oil -- I'm considering avo oil, but I haven't found the stuff in a glass bottle, yet. Food processor is too large for a single person and one egg batches, so the immersion blender seems a good way to go. But I can't do seeds (Lectin diet) so it's garlic and honey... Peanut oil is terrible! Used that mayo (spoons and spoons of it) on hot pasta with grated cheese. On baked potatoes and my husband would spread it on meat -- especially the garlic variety.

When cleaning the food processor, fill the bowl with hot soapy water and wizz. It will clean the bowl and blade all in one. ❤🌅🌵

Wjhen they are in season I like to use a whole avacado to make mayo. I substitute it for the egg yolks. It is made just like using egg yolks with a touch of cayenne pepper added for a bit of zing. It will last about 3 days before it turns that funky gray color. I make it just before I know I will use it in potatoe salad or if I am going to be making a bunch of sandwiches. I medium pitted avacado replaces 2 egg yolks.

Wow, your egg yokes are so yellow. surprisingly. My free range chicken yokes are very orange! lol It could be the mustard in the 2nd batch that made it a more yellow color, too.

If you add garlic, you get aioli. I know you don't love piquante foods, but we often add chipotle to our mayo - great ob BLTs! If you use butter instead of oil, and mix it over low-heated water, you get Hollandaise sauce. Mmmm. Eggs Benedict... This sauce is the base for at least 14 classic French sauces that are really just Hollandaise with additives. I wish I had a nickel for every time my grandmother had me make Hollandaise or Mayonnaise when I was growing up.

I would have to say that there is no other way to get mayo made with avocado oil and farm fresh eggs. The maple syrup is also a great addition. YUM. Where did Spring go.... It's white outside again. BOO. Come on Spring.

Most salad dressing are made with egg Yolks I hauled 6400 gallons of egg yolks in a Tanker truck from Iowa to Los vegas to a salad dressing plant just use make the mayo base thiner and add dryed spices to flavor it

Since you normally You use one or two egg yolks per 16 OZ. So when I was hauling all those yolks how much salad dressing could Make with the load before they go bad ? When I got there I saw 16 rail road tank cars of food grade corn oil

Don't really know the difference between an immersion and an emulsion blender. They look the same to me. Anyway I use one of them. I use one whole egg, a pinch of salt and dribble the oil while blending until I get the consistency I want. No vinegar required. No separating white and yolk either. Makes a nice amount that it is used quickly so I don't have to worry about it spoiling.

Nope! I hate the stuff but hubby like it and it is a great way to use up extra eggs! Some people use mayonnaise in cake making. It is supposed to make super moist cake.

Interesting that you did not need any oil in the Immersion blender version. Oh yeah, that's right; The oil magically showed up in the jar without you adding it in. Must be magic.

May I ask what make is your immersion blender? (Is there a difference between an immersion blender and an Imulsion blender?) I was planning on ordering a new one soon because mine just broke - and like the look of yours! I will be making mayo with it now for sure!

Had to repeat video a few times. When was the oil added in the Ball Jar method method? Processor method had oil added early on, but wasn't on the Ball method....it just magically appeared when he was ready to blend. And was the White Wine Vinegar added to the Processor version?? I'll have to wing it.
