Good morning Heidi! I'm so excited to tell you about my raisin starter and wine. I was gifted 2 huge flats of grapes, so started a raisin starter (per your instructions) immediately to make wine with some of the grapes. I was flabbergasted when I fed my starter after a few days because it bubbled up in the most gorgeous, surprising way. I've made kombucha successfully and had some wonderful bubbles with that, but the raisin starter was completely different. Beautiful! My sisters and I talk about your videos all of the time, one of them is also using your fermenting and wine making instructions. We are having so much fun with it and reference your videos often. We live far away from each other and your videos have given us something that makes it feel like we are closer together. Thank you with all of my heart for what you are doing here. God bless

I use coconut milk (pure) kefir and it is the only thing that works with my system. Everyone is different. Don't give up if the first thing you try doesn't work. I tried home made yogurt years ago. It didn't help and seemed to make GI things worse. So, keep trying until you find what works for you. TY Heidi - a very important topic.

Heidi, I have been making your fermentation starter for a couple of years. I love to drink the fermentation starter juice before I refresh it. I had some wild blackberries on the side of my yard and I kept it going for a year until it got really mushy. But it sure was a refreshing drink on its own. I'm excited to try what you demonstrated today so I can have a bigger supply. Thank you Heidi. You are truly a great kitchen chemist. 😊

I use a recipe from the internet...3or 4 tablespoon of ginger in 3/4 cup of water...and every day 1 teaspoon of sugar...that's the fermentation starter...my mom uses hibiscus for jam/ jellies...uses a lot of sugar:)...

Water kefir is my favorite. I started making it again late winter and have a good culture growing. This time I was smart and when it grew I dehydrated some and put them back for later as well as putting some in sugar water in the fridge. I make mine fruity and used a lot of your advice in your older videos to help me figure out the combinations and ratios I preferred. My very favorite, and the one I get the most fizz making is lemon lime.

I do this exact thing with 1/2 cup of Keifer water per half gallon Thank you for helping us widen out, I love the spruce tip idea. I have a 3 year old (your recipe of course) raisin vinegar that I pour off, feed and fill back up.

My favorites so far involve a starter such as a ginger bug and more ginger, fennel, or hibiscus. For me, a simple ginger fermented a year can't be beat. That said, a commercial tepache I had was great too. I've just never pulled the trigger on the pineapple.

We have tried kombucha, but DH didn't like it. (I don't drink fizzy stuff.) I tried making a ginger bug, since he likes ginger ale...but it didn't work! I like the idea of "using what you have" to make the starters. I think I'm going to try again. It is a good skill to have in my toolbelt. Our two oldest grape vines are producing this year! As God blesses, next year the ones we planted this year will, too. I want to be able to make wine. Thanks for conveniently listing the wine playlist.

I have cancer that I have been fighting successfully for 4+ years and need all the healthy healing foods as well as as many calories and protein that I can consume to keep my weight up. I made a gallon of medicinal spruce tip oxymel last spring/summer that is only down by about a pint and a half now, but this would have been a much easier and less expensive thing to make. Shew! (But I’m glad I’ve had the oxymel when I’ve needed it.)

Sound like your making the yeast water that our grandmas always used for breads and stuff. I made it a couple times with grapes and loved it but just didn’t know how to make bread with it. Pablo’s yeast water on KZbin is a good tutorial too.

That is fruit yest...Just separate fruit, add some organic row sugar and organic whole rye flour, make consistency like sour cream, keep that in the fridge...just leave cap loose....feed that every uther day...with sugar, water and rye flour....that is starter for your bread...

I started making kombucha and water kefir because its cheaper than store bought. I love them but unfortunately when I drink my home brews I get a very bad headache. This does not happen with the store bought.. I'm going to have to try it the way you make yours and see if I get a different out come. Going to check out your other videos on your starters. Try diluting it. (?) Or a second ferment? DAILY I mix 1/3 keifer water, 1/3 Kombutcha and 1/3 of my herbal infusion for the day. This has helped me drink the bitter herbs.

My mom used to use dried ginger (spice) to starr her ginger beer starter. If she found it being too sluggish she would add 2 to 4 raisins just to get it going.

If you are wanting a good ferment like wine, soda, or vinegar, you must have sugar. Remember that the fermenting process eats through the some or all of the sugar depending on what you are making. Non nutritive sweeteners only add sweet flavor, nothing more

I have tried both the water kefir and the ginger bug, but even with fresh ginger, I'm having problems getting it to ferment properly. I blame that partly on the fact that 2 years ago we has to buy a new manufactured home after hurricane Laura destroyed our old home. I never has problems getting things to ferment there, but I'm thinking the formaldehyde in the new one is causing problems, as well as it just being new? It also has central air which we never had before and even though I keep my ferments out of the drafts as best as I can, and we keep our air on 75 during the day, it may have something to do with it? Anyway, I am definitely going to try your raisin starter. I think because they are so naturally sweet I can get them to work better. I live that idea and now that I'm able to find some organic bulk raisins from Azure Standard, I'll be working on that. I have recently started making my own kombucha. I am the weird person that has always preferred tea over coffee. I am on my third batch and I like it plain as well as with a second ferment. I'm especially liking strawberry this summer. It is so much cheaper and since my husband likes sweet tea, I'm gradually getting him to drink this instead. Win, win!

When fermenting, no, you need some kind of sugar but you can use raw honey. Just remember that the process eats through some of the sugar, this is the process that makes it fizzy. The longer it ferments, the more sugar it eats through but it will also make it more alcoholic and eventually turn to vinegar if left too long

Hi Heidi. What options are there for making a probiotic if I don’t like fizzy drinks, and I’m lactose intolerant? My doc suggested an OTC probiotic for my terrible gut issues, but I want to make my own and get away from pharma.

The only thing I can think of it drinks like these is to allow it to fully ferment to vinegar. Once it is vinegar, there are no bubbles at all. In which case you will want to dilute it down or drink straight in a small shot.

Heidi I made some vinegars recently, I makenthem alot and have done since watching your video a fee years ago however every now and again I gey one that stays fizzy .I have mint that has done this now and I have just got into learning about fermented foods and drinks and making a goji Berry starter and a lemon one and went and found this fizzy mint jar from about 2 mths ago I started it. Is this the same a fermentation starter? Shall I just add some pineapple huice and see what happens?

Sounds like there was a lot more sugars in those ones. That would be the only thing to keep them fizzy is the sugar content. If you bottle or jar it up with an air tight lid, it will stay fizzy until you expose it to oxygen again. Yes, if it is fizzy and active it is the same as a fermentation starter

Heidi I used to make kombucha. I need to order a new scoby and start again. I really like it. So far this week I've foraged yarrow, roses, pineapple weed, water mint, and wild garlic. I've made more rosewater for my son's skincare, and a type of garlic pesto with wild garlic, walnut oil, and Himalayan pink sea salt. I've also planted up some water mint, self-heal, yarrow and pineapple weed. My herb bed is going to be so full of useful herbs ready for when the food supply chain, global economy, and medicine supplies collapse. I've also made kimchi this year.

I make ginger beer the first time, and in some video, they used 2 cup of sugar, and I started with 1 cup, and slowly added 1 1/2 to eventually 2 cup of sugar on day three. and because of that, I bottled it. Afraid that it's out too long. Maybe I'll let it sit out for day 3 and 4th in the bottle. My question is, is 2 cup too much of sugar, or too sweet? I see that you only use a half cup for a half gallon. maybe i over sweetened it? thank you Heidi.

If you are making only a half gallon, two cups may be a lot but if you are making a whole gallon, it may be fine
