Thank you for your hard work, in making this video…I just bottled lemon extract. I let mine setup 5 months. Have a batch of vanilla extract. It’s been sitting for six months now get it ready for Christmas. Lol I am giving fresh freeze dried herbs and extracts for gifts I’m so excited. Have a blessed day

@@HerHomesteadSkills I don't think it's necessary either, but it's a really good solution for the people who want to complain about your experiments and how they could hurt people. It's very diplomatic and a great solution to the issue you were having. Me and a group of my women friends who watch you didn't have the greatest examples of how to be productive problem solvers and it's really great to have an example like you. You are appreciated.

@@HerHomesteadSkills I was wondering if you could add peel as you have them or if you think starting a new jar is a better idea. I know I've seen others that add vanilla beans periodically as they have them, vodka too, but I 've thought that would interfere with the original jar/bottle and the amount of time you need to let it sit to gather the flavor. I was also thinking that I'd try raisens this way. My thinking is that for people who can't "process" the fiber from raisens but like the flavor, this extract could be used in baking, etc. I've also been trying to source food grade glycerine locally to be able to use that in place of liquor. Not having much luck with the large size containers so I could start a few "flavors" alcohol free for gifts, etc. I'm sure Amazon would have it, but I prefer not to shop with them. If you haven't seen the HOMESTEAD HEART channel... you might really enjoy it. She has a video on extracts that really got me thinking about this whole process, using everything you can from ALL the foods we grow/buy & she uses the food grade glycerine because she doesn't want the alcohol content. I'm anxious to try some of them both ways, just to see if the flavor is any stronger/better. When you have time tho... check out their channel... they are some of the sweetest people. She ALSO makes her videos interesting for people like me that have canned a lot but seems to really try to keep things simple & very "do-able" to help the folks new to canning. Channels like hers & yours can take a lot of the anxiety out of these processes for those just getting started. Kudos to you both!!

@@HerHomesteadSkills - a freeze dryer is great for processing vegetables, meat and ready made meals when you have an excess. Properly packaged the food has a much longer shelf life than canning. Someone gave me 4 large boxes of tomatoes, some were starting to go off, instead of letting them spoil and end up in the garbage, I washed and sorted, then cut them up, used the tomato processor to remove skins and seeds, put the sauce on trays in the freezer to pre-freeze, then into the freeze dryer. When they are done the sauce can be powdered up and sealed into Mylar bags or canning jars with oxygen absorbers. The tomato powder will have a shelf life of 10-15 years. The powder can be reconstituted into tomato paste, tomato sauce, tomato juice and if you also have freeze dried vegetables like carrots, celery, etc you can powder those as well and make a type of V-8 juice. Tomatoes can also be freeze dried in chunks and then added to soups. Freeze drying retains 90-95% of the nutrition in food and is a good standby when garden crops fail. If you have been gardening for years, you know not everything produces as well as it may have the year before, so having freeze dried foods can help fill the gap until the next gardening season. When I first found out about freeze drying I was hesitant to purchase a machine because of the upfront cost, but when I sat down and calculated how much I had spent in the last 4-5 years on canning supplies, I was surprised to find I had spent more than the cost of a machine - so I felt it was worth it to start up freeze drying adventures and I’m not sorry I made the purchase.

I'm definitely going to try this! I always grate fresh orange rind (one large orange) into my bran muffins, but sometimes oranges are quite expensive. It would be nice to have the extract on hand for those times when I don't happen to have a fresh orange. Who knows, maybe I'll like the extract even better! If I use a fine grater to grate the rind, do I just leave the rind in the bottle, or should I strain it out? Do you know how much extract would be equivalent to the rind of one large orange? Would a teaspoon be too much? Thank you so much!

homemade orange extract is not as potent as the commercially available one! and no, I don't know what the equivalent would be as oranges do come in various sizes and varieties. Leaving the rind in is ok, just avoid the pulp!

If "they" still want to criticize & carry on... a quick comment from you to "SEE DISCLAIMER" should suffice! Just think of the time put BACK in your day by not having to defend YOUR KITCHEN, YOUR RULES,etc. Personally, I think you've been very patient with these people who can't seem to use common sense & more than that seem to not understand their option to just keep scrolling. Good on you! Also... I'm really glad that the 1st post that came up for me after I responded to your answer to my questions about the cranberry recipe was this "recipe"!! Since I don't have any small bottles on hand can I just use buy vodka in small bottles? Just open the bottle and add the vanilla bean (or citrus peel) to it and leave it in the original bottle? Any reason you can think of, that wouldn't work? I'm excited to try this. I caught myself before I started clapping my hands 👏👏👏👏👏 The last time I got that excited about a kitchen project, I had sprouts growing everywhere and in everything. My husband was afraid he was going to find sprouts coming out his ears. He gets nervous if I gleefully clap my hands! 🤣😂🤣😂🤣😂🤣😂

If you dehydrate the Peel for like 20 minutes, it gets rid of all the moisture in the pith. so then at that point it doesn't even matter as long as the peel is still somewhat flexible when you throw it into the alcohol you're good

OK. This is officially the most comments I've ever made on one post! Geeeeepers!! But here goes. I think that the little vodka bottle looked like it said GREY GOOSE on it. If not, my comment will still apply for anyone going out for vodka. For those that have a Costco membership, their own brand of vodka is comparable to Grey GOOSE at a MUCH better price. Just a thought to help save a little money. Happy concocting everyone!!
