This was such an enjoyable recipe to follow. I’ve never even made traditional pasta from scratch and this was my first attempt at anything of the sort. Your video was super helpful step by step! I was so happy the noodles turned out like real noodles lol. I flavored with fennel, mint, basil, nutmeg, Olive oil, salt+pepper and served with a lemon ricotta sauce. Definitely needs a little tweaking on my end with flavors and my first time I made it a bit too thick, but I really love this variation of pasta, the versatility and health benefits! How clever to put the colander in the pasta boiling water, to be able to just lift it out when it is finished boiling! I just made home made pasta for the first time yesterday. Not buckwheat this time, but will try that another day!

Homemade pasta is the best and so easy to make. Sometimes I get too creative and complicate things more then I should but I enjoy it a lot.. Thanks for your encouragement.

@@thecave.-.Quovadis Have you tried to make home made pasta with some sort of tomato to flavor and color it? Like sundried tomato paste (red pesto), or regular tomato paste - or some other version? I have bought various colored and flavored dried pasta in Greece to bring home to Norway at the end of previous vacations there. For instance some with beet root, others oranges, octopus/squid ink (!) etc.

The green seasoning is a herb garlic seasoning we make.. see the video for that. It's great seasoning for everything.

GGood Morning... Thank you for that very good question. I never thought of it and have never tried this but I suspect it would work very well....... Try alkaline solution instead of eggs. Spread some Baking soda on a clean baking sheet and bake it in the oven for about 50 minutes at 400 degrees. then let it cool and put it in a jar..and store in your pantry.. you can always use it for this. then to make the solution use about a quarter cup of water and melt about 1/2 a teaspoon of he baked baking soda stir well. add this to your buckwheat flour instead of the eggs and need your pasta dough as usual to the firmness you desire...kneed it well enough and let it rest in the fridge for an hour or so. then roll and cut. This should work fine. Please try it and le me know. thank you again. Kovadis and Nal

I used 2 cups of buckwheat flour..and 3 eggs with a bit of herb garlic seasoning and that of course is optional.. The dough should be firm yes very pliable so sometimes you may need to add a drop more or less.. You will see...

Pressing down on that glass/ceramic cook top is not a good idea. You're going to crack it in the near future and worse case cut yourself badly in the process. Please use your counter or some other surface. :)
