Awesome video! It might be worth noting that the extrusion method( noodle press) is notorious for abrading low hydration noodle as the dough contacts and goes through the die( the disc with holes). Pre shaping your dough rounds into 'logs' and then allowing them to sit in the fridge for a bit might given you a little less friction contact when the extrusion process starts?

I just got the same exact noodle press recently and this is the recipe i was looking for! I made 100% buckwheat noodles before but they were still too dense even if i cut them super thin and roll them out super thin. Thank you!

This is so awesome! I bought flour to make soba noodles, but I've been making crepes with it instead because it's so easy lololol I'm definitely going to give it a go at some point

I usesally make these type of noodles with faxtail millets. Adding a bit of rice flour or tapioca flower to the buckwheat keeps it together. Also boiling hot water after it comes to get her, let it cool down till you can comfortably put your hands in it. Then kneed and kneed. Put in a press and directly squeeze into boiling water. I've made buckwheat using traditional itallian gnocchi recipie and it was just as awesome.

Thankyou soooo much for this recipe! It’s 💯 I’m glad cuz sometimes on the titles says buckwheat noodles but indeed it’s combined with all purpose flour ( so in my case very sensitive to gluten will be a not to go recipe). Again thanks 😊

Ingenious! Actually surprised this worked, ha-ha! I don't think my people, Eastern Slavs, traditionally make pasta with buckwheat--a common grain the whole groats of which we eat as other peoples do rice--so this recipe intrigues me. But I'd have to do it the hard way, by rolling and slicing, so I'll wait until cooler weather. ThanksForPosting : )

I've seen people add tapioca flour for pliability. But I am going to try 💯 buckwheat because I have the flour waiting

Appreciate the effort. Most of us aren’t as skilled or equipped with the right tools like Soba Masters are but this was a unique attempt at a conventional method. 100% Buckwheat is definitely better for that deeper flavor and chewy texture but guess I’ll settle with the prepackaged dry noodles.

You should also try making sweet soba karinto! It is a Nagano (Japan) speciality and from what I remember the dough can't be too dense and are probably deep-fried for a short time (but the inside can't be left wet and the oil needs to be reduced afterwards). Maybe it is also possible to do it on a baking tray.. I don't really know.

Hey Christina! Actually I didn't know that noodle press was a thing,and i thought great,i want to make soba noodles but where could i find the tools she uses? But then i searched on the net and saw that it's a quite cheap utensil to have and i am going to buy one! Do you know,or have you done it,if we can make lentil,or chickpea noodles/fusili/whatever with this noodle press machine? It would be a great video to make,since legume pasta is quite expensive,and if i can make my own,using only flour and this press,then it's a no brainer. Thanks for the ideas!

Hi, I have used buckwheat flour for lots of recipes, however I have chosen to now purchase the grain, and as the lady has not replied to your question, I will be using my Vitamix for dry ingredients, however I would think maybe using a small blender without putting too much into the container would be fine. I shall be trying this recipe but sadly I do not have a noodle machine, but I shall try cutting it into fine strips and using it like a tagliatelle. Wishing you all the best. I am not Coeliac however since 2015 I stopped all gluten for 9 months to be able to regrow my cartilage in my knees and elbows etc...I do have a little gluten every now and again but prefer to stay clear, for health benefits.

Would it have been easier and more successful with a roller method, i.e., a pasta machine? You'd have to be very careful as they came out of the roller, support them so they didn't break apart, but have you tried that? Thanks for the demo.

@@NeonKue The title of your video is "How to make Soba Noodle". You didn't do this - you failed. You made crappy tiny bits of sludge (freeze at 6:49) that isn't what anyone expects when they think of what a soba noodle is. 8min video and you show your finished "noodles" for 10 seconds. The title is misleading, and you wasted the time of everyone who watched the video hoping to [learn] "how to make soba". Shame on you.

@@zulucharlie5244 You must be fun at parties. This was simply a different method using a common kitchen tool instead of the traditional board and Soba cleaver. Plenty of other videos showing that method and it’s not like there’s any other way of doing it, what more do you want? Lol

An honest title so that I don't waste 8min to find out that your "different method" failed so miserably that: a) all you made were tiny 1/4"" noodle bits (not Soba noodles); and b) you apparently had enough self-awareness of your failure that you only showed the end product for less than 10 seconds - out of a total 8+ min video. Wow - just went through your channel history - you've been doing this for 10 years?!? 10 years and you have less than 100K subscribers, and most of your videos get less than a couple of thousand views. Now, I understand - you are incapable of learning.
