I learned that in a recent conference we should begin crafting childrens interest in middle school. With that being said, we've just begun working on my 7th graders interests instead of focusing on what the norm might do with curriculum. There's no need to. We homeschool so we need to customize our child's interest because we're building their educational resume (not ours). So glad you spoke about outsourcing classes because it's ok to do so. Great job once again.

How many hours would you say it takes per day to complete coursework? I don’t want to overwhelm my kid.

It depends on the grade. For high school, homework took my daughter about 40 minutes-1 hour per class, and also depending on the assignments. (Some were easier and she zipped through them, and some took more time). Each class has Live Lessons, and those are also about an hour, but not every day. She felt a little overwhelmed with math but was okay with everything else.
