I might be not getting it..but do you make that on a Sunday for example the sandwiches and you eat them all week and they stay fresh in the fridge?

Yes, I make 4 or 5 days worth (however many days are in our homeschool that week) and put them in a stack in the fridge for Emily. The only thing I had to "preserve" was the apple slices I put them in a salt water bath to prevent browning. Otherwise everything last just fine.
