I’m envious of your canner score, but yay for you!!! You’ll never regret canning meat. It’s so easy. My favorite is chicken legs, chicken breast, and beef all raw packed. I’ve done round roast and brisket, both cubed. Ground meat is nice too but a little more messy of a project with par cooking and grease drainage. Thanks for the tour. I love a look at other’s hard work paying off. 😊

I’m the same way when I clean a container space. I have to climb over the stuff just outside the doorway -lol. We found that whole dried cloves (dollar store ones are good) help keep mice out of our camper. We’ve tried everything (dryersheets they nest in - Irish spring soap they chewed up - mothballs I hate! DCon is poison and can kill natural predators if they eat the mouse after and pepperment oil makes hubby gag). The cloves worked great. And vacuum up easily from the storage drawers

Lol It's actually much more user friendly than i was led to believe. Just follow directions exactly and you can't go wrong. When the gardening season came to an end i was disappointed. Now i want to can everything in sight. 🤗

Oh my goodness i just found your channel!! I will be binge watching your videos and taking notes. I am SO excited to expand my root cellar knowledge. You've mentioned some exciting recipes as well that i must try. So fun hearing that you collect rose hips for drying. I discovered, while camping, how delicious they are steeped with spruce tips. I'm in Alberta and they grow everywhere. I even collect them in the winter. I find the AB variety to be more flavourful than the Ontario hips. I am planning a life changing relocation back to southern Ontario and am embarking on an off grid homesteading adventures that i expect to take years. I have a small cabin there that i built last year, next step root cellar, so thank you for sharing your root cellar and pantry. I look forward to following along on your adventures as well. Congrats on your All American. The ability to can meat will make all the difference in your food storage. We only can chicken breast, rabbit, and Stew Meat but those 3 items are so helpful when meal planning that I try to never be without.

I do recommend changing out your petcock for a stem and weight. You can get them on Amazon. It makes keeping an eye on your pressure easier. I never rely on the gauge because they go bad, but the weight will always be true.

Please don’t be afraid of using a pressure canner. Follow the instructions and your canned goods will turn out every time. Maybe the odd lid or jar may cause failure. I have been using a pressure canner for many, many years and have grown more confident using it. And I love using the canned meat in so many recipes. Makes preparing supper so quick and easy! Chicken Alfredo? Chicken tetrazzini? Lazy day stew? Yes please! Good luck!

Pressure canning opens up the world of canning and is perfectly safe if you stay focused and follow procedure. Our All American 930 allows up to 14 quarts at once. Cold and hot pack canning is great too but some things require a pressure canner. Like most anything, the more experience you have the more comfortable you become with the process.

Potatoes 🥔 do seem to like cool dry places better. For your pumpkins that aren’t completely gone you can puree and can them or freeze them to extend the life of them. We love them for baby pumpkin purée and for pies and to add to things like chili and such. There’s so many recipes that you can put the pumpkin purée in. 😊

Hi Chelsey, your pantry illustrates partially the law of centrifugal disintegration in physics. As a mass grows, and it’s “spinning”(in use in this case) then the more it spins its elements out of order into chaos. Think of a spinning asteroid or the principle of extracting honey in a spinning device. Point: anything in use goes from order to chaos! Falls apart slowly or rapidly. You might use the bee extraction for home school illustration of this effect. Or the pile of stuff outside the pantry! Always enjoy! Bob

Congrats on getting the All-American! I have a couple of 23-quart Presto canners that I do most of my canning in. Like anything else in life, practice a couple of times with only the water in the canner in order to learn the steps, and you'll have it mastered in no time. Also, I suggest you check out "imstillworkin". Sue hasn't made any videos in awhile, but her channel is a wealth of knowledge on everything to do with canning, growing food, making meals from food storage, and more.

Someone commented on the fruit thing being fermented. Well on occasion it does ferment but my experience is that the boiling seems to modify all that. Fermented fruit never hurt anyone actually the Germans ferment fruit to serve with ice crean "rumtoff". Fun to have fermented fruit on cake or ice cream for a treat between two of you when all of the children are bedded down for the night.

A story and suggestion for pumpkins: At my old apartment, the dining room had open built-in shelving, and was open to the kitchen. I once kept a sugar pumpkin on that shelf all winter (I never took down the thanksgiving decoration), with the temperature around 20*C. A hypothesis for your situation is that maybe the pumpkins got too cold. You could try and keep a single sugar pumpkin in a more room-temp dry spot next winter.

I love, _love, _*_love_* these food storage videos. I am such a "new bee" at food storage, and so want to get better at it. The micro reviews on the potatoes and squash were invaluable. I wonder if you were to can that pumpkin next time whether it might not be more valuable as "people" food? Maybe Kate could experiment with homemade canned pumpkin? Being from Texas, I am quite accustomed to eating canned "mashed" pumpkin (and canned yams, and\or sweet potatoes) as a savory side vegetable. We heat them however you like (usually baked as a casserole or just in a saucepan), add salt, pepper, sometime cinnamon or nutmeg. At the table we top it with butter (or your lipid of choice; coconut oil is awesome). If your family likes spicy food, I've been known to put ground chile pepper (not chili seasoning, more like hot paprika, chipotle, ancho, guajillo, etc.) on them, too. I don't usually sweeten them with anything, but plenty of folks cover a pumpkin casserole with marshmallows, or add brown sugar, maple syrup, or maybe even your fir tip syrup to the pulp before baking. I once was served a pumpkin casserole covered with canned pineapple rings; it was delicious. We also cut fresh pumpkin into large pieces and roast the chunks for a side dish. Season as you like, and add a pat of butter. We bake all three into delicious pies... All three taste like pumpkin pies. The pumpkin and squash seeds are roasted as "pepitos". They are seasoned as simply or as elaborately as you wish. They don't last very long because they are gobbled up. Either hull them first, or spit out the hulls when you eat them. BTW - my chickens, ducks and geese love pumpkin, too. The seeds are said to be natural wormers, and they usually go before the flesh. I have to cut them up for the ducks, but the geese and chickens do it themselves if I smash the pumpkins open on a rock for them. Have I asked about berries before? Do you grow any berries? I just planted about 20-30 raspberries, tons of strawberries, some black currants, Cornelian cherries, and a red gooseberry this past year. There are wild blackberries everywhere, too. I planted early, mid and late ripening berries. I hope to plant blueberries sometime. I also planted some quince trees - I love quince jelly, but they also make awesome savory tagines or stews. They can be added to apple juice or cider, but will turn the liquid red. With hugs and love, Kirsten

You are going to love canning meat. When meat Is starting to get freezer burnt. Can it up and it is so yummy! Give hubby extra love for finding such a good deal in that canner. We bought 2 of the brand new. But ours is 19 quart canners I think. The biggest ones you can get. You will love the meals in minutes that canned meat will give you.

One tip though: don’t store it with the lid fastened or you could get pitting inside it from trapped moisture (I learned that when I first got mine, luckily didn’t have pitting but would’ve if I left it longer). New subscriber here, happy to have found your channel. Butternut squash is my favorite, however, I did try the sugar pumpkin last year and we love them. I’m in SoCal, so we can grow just about anything all year long with no fear of freezing. I plan to plant more butternut and sugars squash again with the watermelon. Too bad we can’t can watermelon! Have you tried canning the fingerling potatoes? That’s going to be my experiment next fall. I just diced up six extra large sweet yellow onions with bacon and am canning bacon onion jam today. We would love to have a root cellar but unless we built one out in the far corner of my property, as property and houses here just weren’t built with cellars or root cellars.

I have a box of large Red Potatoes in the mudroom, and they are doing just fine. But the tiny ones that were in a gunny sack in the service porch, sprouted and I had to cut up the sack to get them out. I put those teensy ones (1/4-1/2") in water tubs for 2 weeks and they all sprouted roots, so they are now in 10" pots in the mudroom under grow lamps. I just this week put the little bit bigger ones (3/4-1-1/2") in water tubs and will put them out in the earth garden in mid-March... and then pray that we don't get a late freeze like several years ago. Have never had this happen before. Am now hearing it's happening all over the states. Have no idea what's making them DO that.

Chelsea, nice job on cleaning your pantry! I use peppermint oil around all of my doors and windows to deter mice from trying to get in. Also use the steel wool in cracks as well. It also helps to have a cat!!! We don't have one because hubby is allergic to cats. Where do you order your rosehips from?

Loved this video!! I can’t wait to have a huge pantry again. When I became an empty nester I downsized everything for just myself and husband. Now, I’m going to be moving to PA with my eldest daughter and her family and starting a small family homestead and business. They’ve been worried about me not having anyone and my health not being fantastic. I’ve fought the good fight for some time but I can see the value in being together and I’ll feel more useful again. Now I just usually feel lonesome and not much use. Not to seem pitiful, though that sounds it, I just think it’ll be nice to be able to help them with my grand children and give me some more pep. My entire life was my kids. I worked of course but I did it to make a better life for them. Once they graduated college and went on to get married and start their lives I kind of lost myself and my MS has been a nightmare too. Anyway....geeeesh that was TMI! Sorry Chelsea. You’re probably used to my dingy ramblings now but I do apologize anyway. My point was to say we’re going to be starting a small business my daughter and I. She’s a fantastic baker. She says inspired by her momma but I think she got it naturally. My son in law is a barber and we’re opening his own shop. So I get to help with grand kids and some of our heirloom recipes and just be with people who love me and want me in their lives. I’m ready. One big thing we’re starting first are raised beds. I plan to can, can and can some more. Keeping food costs down will be my biggest input. I was pretty great at it when my kids were young and my daughter is looking forward to having me right at her fingertips to help guide her. LOL As it is now she just calls me or face times me with whatever the questions are. LOL Good grief! Enough of my rambling! I swear you gotta make more videos so I don’t rattle on so much when you do put one out. Hahahahaha TFS. God Bless you dear lady and the family. ~Lisa

You never have to apologize for leaving any comment you want here. You will always be welcome to share whatever is on your heart. I am so happy to hear you'll be with your daughter soon! As you know my moms recently moved to our area and it's been truly wonderful for all of us. Getting older is hard and can be lonely business. I think our culture doesn't do the best job of caring for our elders. So much love to you from all of us.

May I make a suggestion? Can only one jar of the meat and fill the rest with water or anything you don't mind losing (like cut-up pieces of pumpkins & squash that might otherwise go to waste) and see how that one jar works out. Reason is, nobody's perfect the first time at anything, and if there's any flaw with your canner, you don't want to find out about it 7 quarts later.

If you have a lid fail on fruit or jan : you scoop off all of the mold and reboil it for about two to three minutes and it will be fine. As long as it has been canned with sugar or honey.

Pressure canning is so easy. Use the Ball Canning website. I am from Ontario. Started pressure canning in August 2017. Cut our family budget by 60%

I first want to say I absolutely love your videos!! Secondly I have a question, I had canned a bunch of different kinds of soups in my pressure canner, they are in my kitchen on a shelf. How long are canned soups good for? If I don't eat them all this year will they be fine for next year? Thought you would be a great one to ask!!

I find most foods are shelf stable for a year, after that I always check seals and as long as everything looks good I don’t mind leaving them for a bit longer. Around here it’s pretty rare to have stuff last for that long, though.😊

I know this is bothering you as it did our house. Your carbon monoxide meter is beeping because it doesn't need a new battery, it needs to be replaced. It's somewhere on the main itself or we still had the papers that came with it. The thing is, on the 3rd try for batteries, they did work and we didn't end up replacing it. Hope it helps as as is, it's not working correctly for protecting you and your family till it stops squeaking.

It's hard to tell when you have a good seal with the rings on. I always take them off when once they're cooled an double check the seal.

With what's happening at the moment with the threat from the corona virus, we have an 11 year old daughter who is newly diagnosed type 1 diabetic. Do you know what food we should try store in case of emergency to keep her blood sugar stable? Any advice would be much appreciated, thank you!!

Nope, but we do lots of preventative measures which seem to be effective and we don’t live in an area where bugs are an huge issue, thankfully.

What is the purpose of the foil on your honey jars? Can’t wait to hear about that syrup you like on yogurt - the citrusy one - never heard of it before. I used to love butter orange marmalade but too much sugar now.

You might want to check your smoke detector. I heard a squeak that sounds like my smoke detector when the battery needs to be replaced.

In the pantry beside this one. Yes, these are a pretty thin skinned variety, although they were supposed to be a good storage potato. I'll try another variety this year and see how it goes.

I make my own with our manure, but I’ve used Gaia’s Green Organic fertilizer before and it was awesome.
