As a senior, internationaly, hard boil egg expert, it is simple. I use fresh eggs. Boil water. Place eggs in pot of boiling water, so water covers and boil for about 12 minutes. Remove eggs from pot and put into room temperatue water for a few minutes. Then peel them.

The best way to ensure your boiled eggs peel easily is to use 'aged' (not fresh eggs). Let your eggs rest in the refrigerator for a few days before boiling... The pH of the white albumen increases over time reducing the bonding between the shell and the egg white.
@martinburke3622 жыл бұрын
Even better way after you've boiled the eggs and let the cool for a couple of minutes in cold water break the shell either end make a decent sized hole then from the narrow end BLOW egg will come flying out
@IMCcanTWEESTED2 жыл бұрын
BINGO!! All of this anal-retentive fussing is a waste of time if the eggs haven't aged sufficiently. I go through eggs so fast I never refrigerate eggs. They age quicker at room temp. Another egg fact re: Salmonella from eating raw egg...it's not the raw egg. It's a matter of washing the Salmonella bacterium off of the eggshell before cracking the egg. When you crack and unwashed egg to be used in cooking, the Salmonella doesn't survive the temperature of the frying pan or the oven. Salting the water was the one helpful point I took away.

Being a maintenance man I boil the eggs for ten minutes then let them cool for ten minutes. I knock the end of the shell off either end. Using an air compressor set for 60 PSI aim the stream of air at the opening of the egg and blast the shell off the eggs. Works really great, just make sure you have a firm grip on the egg, I have had to chase a few down that got away from me!

a handy tip for all...peel your eggs under the faucet, running constant and thus changing temps as you go, to whatever setting works when peeling eggs, if the eggs begin to get stubborn and don't want to peel easily, change the water temperature from semi hot to cool, adjusting it back and forth. This causes the "vacuum" layer between the shell, the "skin" and the egg to lessen, creating a temperature change moisture barrier in between the shell and the body of the egg. Get the temperature of the water just right, and it will peel easily. You will find that you can win out over stubborn eggs anytime.

I use salt every time I boil eggs and sometimes they peel easy and some times they don't. It really depends on the freshness of the eggs. If you have chickens that lay eggs you will find that the ones gathered the same day you boil them are harder to peel than those gathered the day before. Just thought you might want to know. Also baking soda in the water works better than salt. Also if you will break away part of the shell for the larger end of the egg and run water over the egg from that end the water will go into the shell hand help pull the membrane which makes it hard to peel away from the egg. You should be able to crack and shell an egg in 15 seconds or less.

I've found that if I face North (in the Winter months) and remove the eggs in a counterclockwise rotation so that in the end your colander of eggs will naturally be pointed South. This is tricky if you stove is facing North to begin with, but it can be done with a little 'english' using the back of your hand. The rest is easy, the South facing eggs will give up their shells quite nicely. Don't cheat, and just turn the eggs South. You can't fool a chicken! Good Peeling all.

What people don't seem to realize is, how an egg peels is more about the egg than the technique. I boiled eggs in Mississippi for 20 years. It didn't matter how I boiled them or how long I boiled them or how long after I boiled them that I peeled them. They ALWAYS peeled easily. Now I've lived in Florida for 20 years and in the whole time I've lived in Florida I've NEVER had a batch of eggs that peeled easily. It's something about the eggs we get down here. I've tried every single technique known to man and in every batch I'll have one or two eggs that peel cleanly and the rest will be hard to peel messy. It's enough to drive me mad!

When adding the cold water after boil, I’ll pop the egg with a spoon and add baking soda. Live in Louisiana

I struggled with peeling eggs for years. I tried this method, the ice bath trick, etc. and still had shells that stuck to the white. After watching some YT videos I now have a method where I have yet to have a sticking shell. Boil your water first with a couple tablespoons of white vinegar. It changes the ph of the water. Gently place the eggs in the boiling water with tongs. Cold eggs going into the boiling water will crack easily hitting the bottom of the pan. Hard boiled eggs get 11 minutes slow boil. I cool the eggs with just cool water. I live in Phoenix so the tap water doesn't get cold in the summer, no matter. The shells practically fly off!

The reason your eggs peel easily isn't because of anything you added to the water. It's because you boiled your water first. The shell expands faster than the egg white due to the sudden increase in temperature. This causes the shell to separate from the white. I've learned to make the perfect boiled egg that is always easy peel and never cracks... the secret is not to boil them. 😐 Steam them instead. Yes it increases the cook time a little, I like them done medium at 13 minutes. Try it next time, you won't regret it.

THANK YOU for posting, how to boil and peel eggs. I learned a cute little morsel of info, from one of the many Cooking Shows. If you have slow tepid water running, over a collindar, just tap your egg on the side of the sink, then; under the running water, roll it in between the palms of your hands and the shell will just slide off into the collindar. The water gets underneith the "skin" of the shell and power releases the tight grip of the shell. When done, the egg has been washed, too. Your shells will be in the collindar and your eggs will be in a clean bowl. (be sure to use a screen basket in your drain, to keep egg-shell fragments, (that escaped the collindar), from stopping up your drain. You can peel 18 eggs in about 5 minutes. I like to pour 1/4 cup of white distilled vinegar and a tablespoon of iodized table-salt, into the pan and start swirreling it in the pan as I add cold water. I set the pan on the stove and add 18 eggs. By the time your water starts to boil, the salt has already dissolved and the combination of the salt and vinegar, makes the shells harder, and with the trick I wrote earlier, you can shell them out, clean and scrumptous! Thanks again for posting!

I always peel eggs under cold running water this makes sure there are no crunchy bits of shell left on the egg 🥚👍😋

My personal preference, I usually just quick rinse the egg right after peeling to wash of any eggshell remnants, this way I save water because peeling hard boiled eggs under running water could quite possibly takes around 2-gallons of water per minute. I think that peeling a lot of eggs under a running water could equate to a lot of wasted water by the gallons down the drain.

The best way to bet perfect yellow yolks is to put eggs in cold water in a single later and and a little baking soda and stir the water. Let the water slowly get to boiling. Once it’s at a rapid boil, turn it off, cover with lid and set timer for 15 minutes. After 15 minutes, pour ice cold water over eggs and I add ice until completely cool. Dry and refrigerate eggs. They peel pretty easily as well.

I heard that the older the egg is the easier it is to peel. With farm to table happening JIT these days, eggs are very fresh and haven't had time to age a few weeks like in the past before JIT manufacturing was the norm. I don't remember having a hard time peeling a boiled egg 50 years ago.

After boiling remove hot water and dunk in cold water for a minute. Take. A spoon and tap on top to crack a small gap. Guide the spoon inside the shell along its shape .it comes off easily. 👍👍

Fresh eggs ( less than 5 days old) when boiled usually get cracked and portion of the contents come out but older eggs have no such problem - easily boiled and peeled.

musicalmarion I've been doing that...they still don't peel all that easily. TBH I don't think they appear to be peeling easily in this video(no disrespect meant to the poster at all, I appreciate the video!). I've seen and accidentally sometimes had the shells come off in like 2 peels. No small pieces cracking off, just comes off so smoothly and that's what I'm looking for!

Exactly, and who puts their eggs in ice water for 10 minutes? I want them super hot. I cool my fingers to get the job done.
@willism19808 жыл бұрын
It is true that adding salt makes water boil hotter but here is the deal: You would need to add 1 tablespoon of salt to 2 cups of water to raise the temp to less than 4 degrees. That is saltier than the salt levels in the ocean. A lot of salt for negligible results and it only increases the cook time by less than 30 seconds. Food such as rice or pasta would be inedible. But adding the ice is a great idea for making it easier to peel the eggs. That is always a chore if not done correctly. Great tip.

I boil my eggs, take off the stove, drain the boiling/hot water then add fresh cold or warm water into the pot and salt. Peels off easily.
@sairahossain29533 жыл бұрын
If the eggs are incredibly fresh they will be difficult to peel, no matter what method you use when boiling. Best results and easier to peel are eggs about 3 to 5 days old for hard boiled. They need to be chilled immediately when taken off the boil to stop the cooking process and this avoids the dark ring round the yolk.

Another way is to add to the water before boiling is plain white vinegar. Your eggs will not taste like vinegar, but should be easy to peel.

One reason people disagree so much on how to boil peelable eggs is that their stoves cook differently. Some heat water quickly while others take awhile. It depends on how much water, how many eggs, and how cold the eggs are. But what you want are very hot eggs very quickly so the inside lining glues to the egg, not to the shell. And the guaranteed way to get your eggs hot quickly is to use boiling water. It's that simple - bring the water to a rolling boil before adding the eggs. PS. If the eggs are at room temperature they are less likely to break when placed in the water, so it's better not to take them straight out of the fridge. But they'll still work with no problem either way. Try it and thank me later.

I find it way easier to peel an egg with a tea spoon, cracking it all the way around the middle with the spoon then slide it in under the centre cracked part and spin your egg the spoon will slide around the middle and take off in one whole half piece.

adding salt lowers boiling point of the water. Putting the lid on raises the temp in the pot. Cold water to stop cooking and shrink the whites from the shells, that's a winner!
@درودچطوری2 жыл бұрын
The key is to boil them as quick as possible, that could be on high heat or boil the water first, this way the inner thin skin will become one with eggshell and separates from the egg easier, little vinegar will help for cracked eggs not to spill out of the shell. I don't use salt at all!!! My two cents.

Here's the way to get your eggs to peel themselves: aftervthey cool in a cold water bath, take the pot and dump enough water to until you hear it the eggs cracking each other when you shake vigorously. Shake the heck out of them just long enoughti loosen the peels,, then pull out your (almost) perfectly peeled eggs! My kids used to love me to pay boiled egg knock around. Now my grandkids do it. Fast, easy and fun!

It's true. The technique for peeling eggs is there. Like it's easier when you start from around its air space. But I don't agree with like boiling, soaking them in cool H20 and so on. It all depends on the type /nature of the egg.
