A Cooking Basic That Everybody Should Know! Today’s recipe is Hong Kong-style oyster sauce lo mein. Some of you might recognize it from a video I shared 4 years ago (here’s the link: kzbin.info/www/bejne/sHeshpaIhq6Hnqc). While the recipe is the same, the measurements have changed, and here’s why: After posting the original video, I received feedback that the noodles often turned out to be too salty. It turns out the tablespoon I used back then was smaller than the standard-it only held 10ml instead of the usual 15ml, which means, when I was using 3 Tbsp back then, it was actually 2 standard Tbsp. This probably misled many people to more oyster sauce and soy sauce than intended. For this updated recipe, I corrected the measurements to match a standard tablespoon: 2 tbsp oyster sauce (instead of 3) and 1 tbsp soy sauce (instead of 1.5). Interestingly, when I checked all my measuring spoons (I own many different shapes and brands), I found they varied a lot-some held 10ml, others 12ml, 14ml, 15ml, or even 17ml! This made me realize that measuring spoons are often inconsistent, which might explain why a recipe sometimes doesn’t turn out as expected and this should be a cooking basic that everybody should know. I hope my experience clears up any confusion and helps you achieve perfect cooking results! 😊
