The deflector plate you removed is not there just for bleeding it serves another purpose. It's there for when you are running down a really bumpy track to stop air getting into the brake if you are on and off them, the same as how a baffle in a car sump works to prevent oil starvation.

You should bleed the calipers off the bike (preferably before you mount them) that way you can easily get the bubble out that wants to go up the back of the caliper when it’s mounted.

I always do that for my own bikes, does save a lot of hassle in the long run.

What is the deflector plate normally used for? why don’t you need it with a bleed kit? Do you need it if you bleed your brakes by opening the top cap?

The hope bleed kit has a special top cap that allows you to use a funnel, so all the fluid is contained within the lever and cannot escape, so the deflector plate then it's not essential. It's not essential to have the deflector plate but just be aware that without the deflector plate in place the DOT fluid is free to squirt up and out of the reservoir. It can travel quickly and probably squirt up to 20cm high. So the plate is there I believe to make bleeding a lot easier and less messy. Without the deflector plate you can just rest the normal top cap on the lever to block any fluid squirting out.

That's just from ebay, people 3d print them and sell them there.

Can you help me with replacing 1 piston on my V4 brake ?

If you look up Hope Piston tool you will hopefully find some plastic blocks that people 3d print, they sell them on ebay etc and it allows you to remove one piston from the caliper providing that you have pressure in the system. That's just me assuming that's the issue. You can just block the other pistons with some folded paper but it gets difficult that way. If you don't have the caliper connected to a bled system then you can use a air pump/track pump on the bleed nipple to create the pressure needed but you would need to disconnect the hose from the caliper with the air pump method.
