The horses are taught how to behave anxiously. Like dogs, they often enjoy their acting work. You can also tell they aren't actually freaked out because most of them have their ears pointed forward.

I think the smoke coming from Meleys' head is actually some kind of incense to mask the smell. You can see the smoke is actually coming from small holders on either side of the head as I'd imagine it would smell pretty ripe considering it's come all the way from Rooks Rest.
