i don't think this was well researched video , regarding timing this is a south indian thing . every breakfast place opens early in the morning this has been the case for decades. structure of restaurant is also not new , if you see similar places like asha tiffins , taaza thindi , bangalore cafe every one does the same structure honestly its not a new or any strategy . two most important things along with other factors that helped them reach this level is 1). influencer marketing - they planned the marketing efforts so well i haven't seen any other south indian breakfast place having this much effort. 2) Actual Food that is being served and the quality control , if it was just marketing effort they would have closed in few months , its the food that brought them repeat customers , the amount of ghee is a polarizing factor in the food whoever hates it hates it with heart and who ever likes it will fall in love with it and also their ability to bring such a quality to every ingredient and every dish is phenomenal honestly very few restaurants can compete in this matter probably asha tiffins and taaza thindi in this matter
