"To support my kids and my family." Simple sounding reason...but then the video cuts to pictures of previous generations showing fong on's evolution in reverse. Maybe this is reaching but in the way it was presented one can't help but imagine every guy in charge of the shop at the time would say the same reason if they were each interviewed as to why they do what they do. Then the depth of those words becomes apparent. As if to say, "We take care of our tofu in the same way we've taken care of our family over these many years...with love."

Most commercial soy products, especially by western brands really are bland and horrible because they tend to use GMO soybeans which incidentally removes a lot of that fragrant bean taste. Then again there are people who don't like the bean taste so it's definitely not for everyone, but those who do like the taste really love it.

I love watching these videos. Between the narration and the cinematography, these videos really capture the dedication and passion these people have for the food they make and the people they serve. It makes me appreciate the process of how food is being made. It makes me believe that the food sitting in front of us went through so many stages and there's so much effort being put into getting just one serving of what we eat and that food was destined for noone else but us. And that's just so beautiful to me.

Tofu on its own isn't great, but it takes on and absorbs the flavor of whatever you add to it. If you add brown sugar water, it becomes an incredible sweet dessert like you're eating a sweet cloud, a less airy cotton candy. If you hzd eggs and some meats and other salty ingredients, it becomes this accent to an incredible dish that's salty and savory (my favorite dish) while again being incredibly soft and mushy, absorbing all the juices.

I like that this guy is honest about why he's doing what he does and doesn't try to romanticize his involvement in the family business to sell sentimentality. He lets the history of the brand do that. From the other video on the white sugar rice cake he had mentioned that he had been on various career paths before deciding on inheriting the family business out of the necessity to provide for himself and his family, and while that doesn't sound very promising it's probably how most people get into their family businesses if they're honest. But despite his slight indifference he has awareness that he needs to deliver quality and keep reinventing the business in order to sustain it, and that's really the key to success.
