Alex you need to get rid of the solid plates in your Webber they do not allow the heat to come through once they are gone you will get above 240C. You can buy heat deflecting foil trays and use a Webber or similar pan on a wire rack above the foil. Enjoy the pork in the future.

Love Hervey Bay Area- we were only there last week. The midgies and bugs are next level though. We always have citronella candles running and run a citronella coil underneath the stairs. This stops them at the door and helps inside.Hope that’s a good tip as I know Erin is prone to bites like me. 😊 Another great episode guys.

Nice effort guys, with my Weber (baby) Q I use the grill plates, convection tray and trivet. I warm the bbq up for about 15 minutes then put the pork in with bbq turned up flat out for approx 40-45 minutes then turn the heat down to just over half for about another hour & a half. Usually get awesome crackling all over.

In the oven at home, we dry the pork in the fridge, coat in oil and salt. Then set at 220 degrees for 30 minutes. We also add water to the pan to allow water to become steam creating extra heat. I'd imagine most of the processes would be the same in the Webber. Like other people have said remove the hot plates to increase the heat. Good luck with the next try 😀

We had the same issue with our Webber when connected to the van. We bought some foil inserts you can order them online and it made a huge difference in the temperature. Does the perfect crackle. Also it helps if you uncover your pork and leave in the fridge overnight to dry out the skin a bit. But highly recommend the foil inserts.

Hey mate, remove the hotplate and use the original grill, and a trivet to put your pork roast on. You'll get the Weber a lot hotter, the hotplate seems to stop a lot of the airflow around the Weber. I had the same issue. Also score your the skin and rub salt into it. Keep up the good work.👍

As everybody said, first get off the hot plate. Another thing you could do ist to put some aluminum foil on the ground below the burner up to the rim. I get mine up to 300°C in perfect conditions (no wind eg). It's the same for pizza.

Dry the pork. Cut criss cross in the fat/skin. Put some boiling water over the fat/skin. This opens up the scoring. Rub lemon juice and plenty of salt on the skin. Chuck it in the Weber at least 180 degrees and sit back. You need to keep the Weber hot.

How long is since you cleaned out all the little jets in the Webber. Get a small drill bit the same size as the jet holes and by hand just poke it through the holes. (Don’t use a drill. Just your hand). This should allow Weber to get hotter. Ours gets well over 200 degrees.

The only way to get cracking in a Webber is , use alfoil 5 sheets thick as base no sides ,put the cracking down first and start the cracking process turn the roast over do not burn the crackling , cook the roast for 1-2 hours turn it up flat out the the last 15 minutes it should crackle . If you have it a tray, the oil will boil it no chance of crackle.
