Thank you for not giving up on this. Giving what the world has been through, I wouldn't besmirch you for doing so. I think this kind of content is much needed, for most people unfamiliar with fighting games and myself. I don't do much in the way of video producing but if you need a hand with whatever, reach out.

Sometimes real life gets in the way (and 2020 was a dumpster fire of a year...), but I've still got a lot of video ideas that I need to get to. As long as I don't get hit by a car, more videos are coming 🔥

The problem with the way many fighting games use hitboxes is that it flies in the face of the universal game design standard that the visual-audio feedback (collisions, animations, etc.) should accurately reflect what's actually happening. Players should be able to intuit what is happening based on what they can see and hear. Information should NOT be obfuscated from players nor should it be required to look elsewhere, outside of the game, for information or explanation. The fighting game genre should not be viewed in a vacuum, as exempt from this standard nor to give fighting game devs excuses to not imrove at this. If a hitbox-hurtbox interaction doesn't make logical sense, based solely on what can be seen on-screen in the middle of a match, that's a result of poor design. No two ways about it.

Is there an accurate list somewhere of all fighting games with the option to turn on in-game hitbox/hurtbox overlays (without mods)? And if not, can people please reply here with the ones they know? I know Killer Instinct (2013) in addition to Skullgirls has this. And does the new Street Fighter 6, or any other Street Fighters, have this?
