First time someone is mentioning flour to water ratio by weight and concept of medium soft for desi parotta. Thank you for the food science for us geeks. Its this kind of info that helps achieve consistency. Thank you

Not required. Milk is enough. You can skip the eggwhite if you want.

yes, interchange the maida with atta and use 10% more milk and extra oil for softness

Can we add soda water 2.3 spoons instead of egg.?

You can skip the egg if you want to. Not advisable to use baking soda as it will make only little different. But if tou need extra puffing you can use it. But a flat bread like parotta just use milk and knead well. You can achive decent results without egg.
