I am all for vegan meat substitutes made from mushrooms (and other fungi, like Quorn). There are several mushrooms that taste like meat. Enoki, portobello, oyster, lion's mane, porcini etc all taste like meat and fish depending how they are prepared.

I am not vegan, but I always love your stuff. Also, I hate portobello, but king oyster mushrooms are the bomb. Those and enoki. I always thought I hated mushrooms growing up. I still do tell people I don't like mushrooms though, because its easier than explaining I like certain types they have never had.

btw with lemongrass, it's better at extracting its flavor if you pound it once first. you can use a mortar and pestle and just hit it wirh the pestle once

Gonna try this one. My issue with all king oyster mushroom recipes is that they are still tough as tires after cooking. Marinating in brine overnight sounds like the perfect way to tenderize them!

My favorite part of mushrooms is that you can cook them to death and not ruin them. Vegetables? Mush. Meat? Tough(or mush, it depends). Shrooms? As long as you don't scorch them, once they're done, they're fine.

Not to say there isnt people that hate all mushrooms, but there are soo many varieties with so many different tastes and textures, I would see if she would be a little open to trying some of the more unique mushrooms like these.

@SauceStache I was going to say something similar. I'm a mushroom hater, or was. I've had a few varieties and found out they're not all evil, lol. And King oyster is awesome, it's so chewy (the one I had at least) that I'd have no problem believing you could make some convincing plant based meat out of it.

when real sea scallops are seared , the top & bottom crisp up & brown, the sides firm up and take on a mushroom like texture but the real star element is the super creamy center, which this obviously won’t provide… any ideas? maybe hollow out the chunks and fill with a seafood seasoned silken tofu???

Sure wish you would market/sell your vegetarian faux meats, etc. Most of the items available in stores are so full of junk/fillers/poisons your products would be a great alternative. I bet many people would love to buy/eat them.

Hm... not sold. I am not a fan of using nori in dishes. It literally gets too fishy (scallops are not fishy). I probably would replace it with kombu. Also a lot of vinegar. Doesn't it taste pickly? (Scallops are not sour). Also: not sure about the char. And broccolini are not really what real scallops are served with. I would make a cauliflower mousseline.

How are they not sentient? They have eyes and swim around. Some argue that oysters are not sentient but scallops? This is honestly why it's such a problem to let people get away with saying oysters are vegan just because we don't know whether or not they are sentient. People then try to apply it to all kinds of other animals they want to eat, like scallops and lobsters, even though they are obviously sentient.

@@chloro8306For argument’s sake, why draw the line at animals then? Fungi have complex networks connecting them throughout the forest. I know it feels simpler to draw a hard line between animals and other lifeforms but maybe that’s not the most logical. I find it to be an interesting thought experiment.

I dont know a vegan that claims to not like meat. I enjoy the heck out of meat, it tastes good, the texture is great. It's just good. The part that vegans dont like is the abuse that leads to the meat. Thats why people replicate it. ;) good try though. If what you said was true then yeah it would make 0 sense. Like saying you hate sweet foods then using artificial sweetener.... usually people that use artificial sugar use it because they dont want or cant have real sugar. It has nothing to do with not liking things that are sweet.

I just find it amusing that a lot of vegans and vegetarians I've met claim to hate meat like the smell, texture and so on yet at the same time they're always buying food that replicates meat. 😂 I'm all for ethical farming practices and the welfare of animals. In fact I've done a lot of animal rescue over the years here locally and in other States as well.
