I tried making the flower-looking sushi today and it was such a success! I used baked salmon instead (from another Rie’s recipe) and I used food coloring to achieve a pinkish color. Because I couldn’t find circular fish cake, I used string cheese and the flavor actually matches pretty well. The finished product was so pretty, my friend and family were so amazed. I was lucky enough to be able to buy the dried salted sakura cherry blossom flowers so I hope I will be able to make this! It’s a shame though that I won’t be able to go this year due to what’s going on in Japan, but I’m hoping i can go back and experience it all over again!
