Something of note: One reason why people aren't required to use gloves when handling food is because wearers forget to wash/replace the gloves. Gloves don't protect the consumer, only the wearer, but people don't feel as compelled to wash their gloves as they would their hands. It depends on the stage of food prep they're in and what they're doing. Your average chef doesn't wear gloves for that reason, but other applications where cross-contamination can be a risk require workers to not only wear gloves but also frequently replace them. As you said it's more to protect the wearer, but it's good practice to toss and recycle the gloves between each job you're doing.
