Dear people, it seems to be oily but if he doesn't add in that much oil the egg mixtures won't turned up as fragrant. if u notice at the end after serving everything from the pan, there's still oil left. not everything goes into the plate la. And that's his first fry with a clean pan also. If u still find it oily after my explanation, reduce the amount of oyster omelette u eat la. Chill, people!

This works for me - the ambient sounds (the roar of the gas fire, the sizzle, the clanging of the ladle, order-taking, plating etc) is calming and comforting since these are so much the sounds of my childhood. Thank you Greg and the friendly stall worker.

It's 1 thing to read the recipe but something else completely to actually see it done. Thank you! From other videos, they use 50g sweet potato flour to 150 ml water for the batter. 2 eggs and 6 pcs oyster for the rest. Additions: fish sauce, green onions, sesame oil, cilantro and pepper.

You should eat Oysters Omelette once in every 3 years. When you eat, you have to eat at this stall at Newton Circles. Best in Singapore. Have been eating at his father’s old stall in the 70s at Kuek Road ( now Centrepoint area).

Back in the day at Orchard Road carpark the omlette did not have the oysters sitting on top and they were smaller and sweeter. just my memory from childhood. Those mentioning the oil brought up a memory of the char quay teow stall at Ang Mo Kio Central air con food court. the cook filled half his wok with oil before he placed the kauy teow in to pre cook it! Heart Attack wah low!

My favourite part is at 05:47 by when you are still reeling from oil the oil added until then. Then bham: He rains fresh oil into in from the top. Killer. I would happily eat this if it were lard/ghee/butter/coconut oil as it would suit my macros on a Ketogenic diet, but that looks like industrial oil (vegetable/groundnut) that WILL clog my pipe work.

super oily but that's how it can be nice. Once a while, indulge is ok. Homecook version, will not put so much oil. What to do, no dirty one's hand, just enjoy what is prepared and it is yummy,. Life is short and do eat once a while is fine.

I counted 13 scoops/spatulas' worth of oil- and that's assuming none were 'missed' in the scene cuts. I replicated this several times with water & got approx 300ml... for 4-5 portions of omlette... scary...

it is my favourite but the cooking oil is a triglyceride issue for the heart, it will cause heart attack unless the cooking oil is changed to virgin olive oil or other cooking oil which is not bad cholesterol

Olive oil is not suitable for such prolonged cooking time as it has a lower smoking point. You gonna burn the olive oil. And impart an awful taste to the dish.

It is not Or Luak it is Oil Luak. Better stay away from this kind of food though it is delicious. Once a while is ok. There are other or Luak stay in your neighbourhood that’s use less much oil.

Super sinfully oily dish and I super love it but I only eat it once in a blue moon. Don't think the hawkers use pork lard in such dishes nowadays. In truth pork lard is good oil, better than oil derived from plants like sunflower, soy, canola and palm. Canola oil is actually an industrial oil, not fit for human consumption. Margarine and shortening are the worst kind of oil. Animal fats and butter is natural and fine as long as you eat it in moderation. Best oil for human consumption is avocado oil, cold pressed extra virgin coconut oil which is rich in lauric acid and MCT as well as olive oil. I only use olive and coconut oil and seldom eat out because hawkers and restaurants use palm or cheap vegetable oil to cook their food. Worse, some use recycled oil that has seen better days.
