Hey Tyler - I've owned an old WorkSharp for years and I'd REALLY like to see you test out one of the aftermarket leather strops for the WorkSharp - it puts a mirror polish on the edge & I think it will make a huge difference on the sharpness tester because I think the problem you're having is that there's a micro burr on the edge after you've sharpened it, just make sure if you use it to make sure the belt is pulling away from the edge so the knife doesn't cut into it.

PS I've found that if you just make really fast alternating passes through the worksharp when you're finishing your sharpening it helps to remove the burr, also don't spend a ton of time on the fine belts or it will just get duller after a while, I do about 5 passes on each side and 1 pass with the strop. Also if you remove the angle guide and just hold the knife at a shallow angle while PUSHING the knife into the belt so it kind of curves around the edge and sharpening it like that while holding it while the belt wraps around the edge you can get a convex edge which is very sharp.

Hey Tyler, I believe that your problem with the wicked edge is that you need to strop the blade edge when you sharpen the blade with the stones because it leaves a burr on the edge which is what your feeling with your finger and thinking it is sharp. Also you can strop the knife on an old leather belt if you want which works great too.

You should have put the pizza cutter on a bolt and stuck it in a drill and used that to spin it against a sharpening stone. That way you get even consistent angles

With all these sharpness testing videos, Tyler really needs to invest in a strop and learn how to strop... I guarantee he's tested the sharpness with big ass burrs causing it to seem way more dull than it really is :/ as a full time knife maker and sharpener it's really frustrating to watch.

I honestly thought he was going to skip actually using it for what it was intended for and instead skip right to the bottles and tomatoes. I am happy he did, as it clearly shows that sharpening even a cheap pizza cutter makes a huge difference. Never no matter price range found a pizza cutter that from the start actually did properly cut on first slice.

In the latest Project Farm video called Russian vs Usa knife sharpener he used the wicked edge knife sharpener on a dulled knife and got a result of 85. His stones went no higher number than yours.

Yo Tyler, there's a big difference between "push cuts" (which is what the edge on up bess tester measures) vs "slice cuts" (which is what the paper cut test measures). With a push cut the blade goes straight down while with a slice cut the blade goes diagonally down and imparts lateral movement. Think of it like a bread knife - a bread knife won't cut if you just push it straight down into the bread, but works wonders when you apply lateral movement. Same concept here just on a much smaller scale. So it's not all that surprising that the big cutter only registered 550 on the edge on up bess tester but still easily sliced paper.

Last time I used one of those, the work sharp that is, there was a way to lock it in the run position. There's a momentary switch and if you push it the other way it locks it on. That way you don't have to hold the switch the whole time.

I saw a video about knife sharpening recently, where they said that the higher grit numbers are actually bad for softer materials. So the lowest number you got the wheel blade to with the worksharp might be right around the highest grit that metal can handle... I'm no expert though so I'm far from certain.

When I worked at Pizza Hut when I was 16 we had rocker style pizza Cutters like the second one. All of the pizza Cutters word all as crap until we found a knife sharpener and we sharpened all of the rocker style Pizza cutters to the point where someone accidentally almost cut their finger off. Then we got chewed out by the manager. So we just kept a couple of them super super Sharp.

while sharpening unfortunataly fine grids definately create a lip ontop of the edge. you can feel it by running your nail from the inside out to the edge tip, you will feel a hinge. That happens when the edge is thin and you grind it, the excess creates a hinge. You can either finely grind this or. .. or try a leather belt.

Do you own a lazy susan? It might be called something else where you're from, but its those circular things that go in the center of a dining room table and you put salt and pepper or whatever, and you can spin it around. All that to say I think you should try getting one of those, and put this on that. That way you know for a fact you're applying the same pressure to both sides of the blade and you can do that by *only* using your dominant hand on each stroke. Because even if you can't feel it, it's very easy to apply 2-3 pounds more pressure to one side than the other simply because of your dominant hand

To be fair, a pizza cutter that crimps the cheese keeps the pizza tidy (It crimps the cheese and helps stop the toppings sliding) and a rounder edge would achieve a crimp better, that's why it spins to assist such a cut (It's "crushing" more than "cutting").

Rotary pizza cutters are the best. The best one I've ever owned was made by the bicycle tool company Park Tools. That thing's blade has held its edge for over 20 years.

*TylerTube* It would be cool to see you or someone else motorize a sharpened disc type pizza cutter. A high torque high rpm small motor, controller and lithium battery with a small kevlar belt drive or direct drive would be the ideal drivetrain. I'd like to see what a fast spinning smooth and sharp cutting edge would do and cut effectively. Or perhaps make an angle grinder attachment like that 😆

You should try slicing empty or half filled water bottles just to see how sharp the items you sharpen really are. I feel like an empty water bottle would be a lot harder to get a clean slice since there’s no water weight to hold that bottle there as you’re slicing and dicing. Might make some interesting content to see what you’ve sharpened so far that can actually make its way through. Just a thought.

I haven't finished the video yet, so I don't know if you tried this, but you should have put the round cutter on a drill when using the electric sharpener so you could keep it spinning and not have to worry about it wobbling around as much.

Put it on a drill via a threaded rod so you can hold it steady while you sharpen it. Drill will make sure all sides are relatively even.

You could dull the two handed pizza cutter to 2000g and you could still cut the pizza with little problem. It's bread and cheese and maybe pepperoni. You can simply push down harder to split the pizza. You can do the same with a rolling pizza cutter, it's just a different motion.

Might have been easier to put the metal disc in the chuck of a drill and spin it in the sharpener to get a faster, easier and more even edge. Or even just spin it and put a stone against it.

I agree with some - it has to be rotated at a constant angle against a "sharpening device" held against it. Almost impossible to sharpen a round object by hand against a flat grit and have it come out even. Do an update and spin it against a stone and strop with a drill motor and shaft.

you need to strop after sharpening to get it super sharp. After using sharpeners, there is still a burr on the edge of whatever you are sharpening, and without knocking off the burr, you won't get the knife/thing properly sharp

For youre next video you should do "Does steel really matter?" Get a maxamet spyderco if you can find one (Youll love it anyway) and test it against a cheap knife like a gas station folder or something. I mean...you can still sharpen and test the sharpness plus you will make us knife nerds happy.

You should try keeping the pizza wheel on the handle and sharpening that way because then the wheel spins on its own. I tried it on my work sharp and I got a consistent and sharp edge on both sides of the wheel ,all I had to do was just take off the knife guides and sharpen free hand.
