Im a pastry chef, next time you try that kind of mixtures make powders first by adding water and cooking down to a broth or cream before adding to the ice cream mixture, powders like that should never be added straight to the ice cream mix

I was gonna say the same. Although not a chef myself. I like to home cook / bake. I think it needed heat due to the cornstarch to thicken and dissolve properly. 🤷🏼♂️ (edit) he also forgot the sugar with all of them. I bet that would make a big difference. I like pickles, but it would never have occurred to me to make pickle juice ice cream. I'm actually kind of surprized that it came out looking anything like ice cream; I would have expected the vinegar to curdle the milk enough that it came out really weird. If I didn't know better, I might imagine that Tyler had substituted some normal pistachio ice cream and just pretended it was pickle-juice flavoured.

I dont think you know how flint/chert/obsidian/ etc works. All you have to do is drive a flake off it and it's literally sharper than a surgical scalpel. Trying to manually sharpen it after that would make it incredibly dull in comparison

@@Portersouth that's called flintknapping and no, You cant. Creating a flake makes an edge thats sharp on the molecular level. I'm a bushcrafter (primitive living skills and wilderness survival) Hence the name and profile icon. And I'm a lover of science as well. I've made hundreds of arrowheads. So I've studied the science behind non granular structure and conchoidal fractures and just how sharp flakes can get. So yeah, I know what I'm talking about.

I work at a restaurant that serves custard (ice cream except it kills people with egg allergies). I have actually blended Cholula hot sauce with vanilla custard many times before and given it to people without telling them what it is. It's not that bad, but it's surprising enough to be hilarious.

For the mac and cheese one, I would’ve poured the milk and cream and water into a pot and got it a little hot first then added the cheese packet and stirred it in so it fully dissolved first, then took it off and let it cool down a little bit then poured it into the machine and added a little bit more milk and mixed then turned it on. The fact that the powder probably didn’t fully dissolve into the mixture probably gave it some weird properties when whipping and cooling

Before you even said it, I also thought of pickle. I can't stand pickles. What is a real crime though is wasting all that dairy making something to throw out. You can make good ice cream by whipping up the cream, stirring in a can of condensed milk, adding any flavors like vanilla extract or sifted unsweetened cocoa powder and stirring, and then putting it into the freezer. Sometimes I do put it into my ice cream maker to speed up the freezing process, but you don't need one.

Other than the first one, I think you put way too much stuff in it. It's like "okay, lets put 6 pounds of chocolate chips in". With the first one, any ratio is fine, with the rest, you needed to use them in about 4 to 10 times less. Basically, look at the ice cream, think if you were really really hungry, how much ice-cream of that could you eat? Now consider that a full meal. Now think about what you are adding and compare that to if that was 1 meal worth. There is no way you would put anywhere near that much in it.

The way you described that hot sauce made it sound like you were making liquid fireballs, because that’s how they work to; you know, when it’s in your mouth for a few seconds, it isn’t hot at all, then after about a couple of minutes, the heat starts to kick in and if you try and swallow sometimes the heat goes down your throat.

Try tomato soup and smoked salmon... Ice cream was actually originally not a desert - but a chilled soup. I stead of ramen packets, try beef broth and fried onion... Basically any cream soup recipe.
