maher channel قناة ماهر Build your own smokehouse and do it yourself. It is not that hard as you might think. The only difference, I prefer alder wood chips instead of oak for fish smoking.

This salmon is delicious. I used to work for an online fine food retailer and we got half off everything on the website. I always got this company's smoked salmon and real French hot chocolate powder from France. Memories....😍

The ending when it said it was the last surviving smoke house in East London got me. I bet most companies just try to completely automate the process as much as they can.

I come from the Pacific Northwest. The Salmon runs were killed off by the dams up and down the Snake and Columbia Rivers. Prior to that it was the 3rd largest industry behind timber and agriculture in Washington, Oregon, Idaho and British Columbia. Salmon are Anadromous fish, this means they lay their eggs upstream and after hatching and maturing a bit they make their way downstream to the Ocean and grow to enormous proportions over 3-5 years and then make their way back to the same place they were hatched, lay their eggs and die. Their used to be canneries all around the mouth of the Columbia and every few miles apart all the way up the Columbia and Snake rivers. They are pretty much all gone now. One of the dams was built without a fish ladder (now way for the returning fish to move forward). Only one dam had screens in front of the power generating turbines to keep the fry from being killed as they journeyed to the sea.

@Rohan Kishibae in USA, only 45 % of them are grown. Most of them are imported and is very difficult to determine the origin of any salmon imported bc there is no way to examine each salmon to make sure the seller is saying the truth. A seller can sell a salmon as grown when in fact the salmon was caught near a contaminated zone. Aquaculture has been growing in the USA but still have not reached the desirable level :-/

Based on the cost of raw and smoked salmon in the supermarket the mark up is around 150%-200% for something you can easily do at home (assuming you have space for a bbq)

“Smoked” salmon is really salt cured salmon with (maybe) a touch of cold smoke. Gravlax (lox) isn’t smoked at all.

We have this in the Philippines. And were doing this long long time ago. It's delicious when you cooked it at the morning with a fried eggs and a tomotoes and a fried rice. We called it "Tinapa".

This is real smoked Salmon. Most of the Smoked Salmon we see in the stores is never smoked, just dipped in a solution of brine, sugar and spices. Most folks have never tasted real smoked Salmon. In NYC we would call this Nova Lox. Incredible taste and flavor.

This is 1 of the best smoked fish'meat, the pink salmon from Alaska I've ever tried to taste in my whole life, so healthy and nutritious for every human body's need and consumption.. This is when you already cooked and it's ready to served for A meal.. This is so good to dip with Soysauce combined with lemon juice added with a bit of cHilli .. You'll be tempted for a more additional cup of rice when this will be your meal for a day, you were do lucky enough.. I really miss this kind of hybrid fish/meat which is actually originated from the Northern part of America's, Europe, Canada and also here in Asia..

At :10 they’re using a Bettcher Wizzard. I used to use those every day when I worked in a turkey plant. Now as an OTR trucker I go past their factory quite often

I love me some smoked salmon, personally though I like a deep Oak taste, I find lightly smoked salmons like the one shown here can lack a bit of complexity for my tastes My favorite smoked salmon comes from Nicky's plaice, Howth, Co Dublin, Ireland. Their regular salmon is great, but they do a wild version when available that's just off the charts.

Using a friction wheel to rub against the wood and product smoke is pure genius. I'd wager by speeding up or slowing down the disc, you can instantly adjust the amount of smoke generated.

Would seem to be a little energy inefficient to need to create smoke through friction vs just smoldering the wood. Wonder if the quality of the smoke is any different as well as reducing any heat output.

Yeah. Fire burns up some of the wood, thus increasing the wood used for the same amount if smoke. It saves costs in total.

People saying it doesn't show how the salmon is smoked are either blind or dumb. The salmon is fileted, then salted, then smoked. It literally narrates it and shows you.

You do realise the more smoke houses there are, the less fish there would be? Because all those smoke houses need salmon, there would be more fishing on salmon and thus reducing the population of salmon and ending salmon runs?

Tommy DoeZ!!! Oh absolutely, but smoked salmon is just a portion of the larger commercial fishing issue. I’m just saying that with proper regulation in the past it could’ve been possible to have both. We surely wouldn’t have hundreds of such places, but could definitely have more than only one remaining.

English salmon is farm raised, fed chicken shit, liquid smoked and very unhealthy.....If you want the good stuff get Alaskan red salmon fresh and smoked traditionally.

I live in alaska. This is a cold smoke and known as locke over here. I use a salt and brown sugar and a few other secret ingredients in my dry brine. Then i partial smoke and can mine. Using sockeye salmon i catch.

If you saw, the insides already had the intestines removed. Proper cleaning/sanitation and proper removal of organs will prevent the worry for parasites. If the fish was diseased to begin with tho, they wouldn't have used it in the first place(esp if they make high grade smoked salmon).

I smoke pacific salmon the Native way by hand The fish was caught that day Rock salt, brown sugar , cracked pepper Apple wood and maple for a nice deep smoke We like to store about 50 to 70 lbs for winter saved a lot on money at the store when you have Moose and deer too
