Raw milk and aged products will react differently with your body, compared to pasteurized and processed cow's milk. I'd try it one day!

@Combee YT as a fellow Spanish guy, I can tell you it's always been translated to english as Don Quixote since the very first translations back in the XVII century so there's nothing wrong for a english speaking person to say it that way, plus it was actually spelled with an 'x' rather than a 'j' in the early spanish editions since it was still common to use the x that way back in the Siglo de Oro, as you would know if you read the original edition or some books or poems from that time. About the other topic, La Mancha is an historical region inside Castilla-La Mancha, and that's how it was called in Cervantes' times, long before the XIXth and XXth centuries divisions that we know nowadays, so it's only correct to say it that way. Before correcting someone, please get informed

Another great video. Thank you so much for doing these! As a home cheese maker I learn so much from seeing the details. I was really blown away by how firm they let the curd get before cutting it. And then only 4 hours in the press! It's very, very different than what I expected from the production of Manchego.

My favorite cheese. I loved 12-month aged Manchego with a glass of red wine. 25 grams, or an ounce or two was perfect. Then I got an opportunity to live in Spain and started eating the 6-month aged Manchego and now prefer it and have 40 grams or 2-3 ounces pretty much daily. Thank you Trader Joe's.

@@MrGabiiiii94 True... but you can't braise sheeps in the middle of Madrid and expect to make excellent CRAFTED cheese. All comes down to balance, and choices you make. But videos like this help city dwellers spend their money well and support such precious crafted food more than those big chain cheap food. So don't spend all your money on McDonalds and Iphones.... you're worth more than that!

It’s all down to preference really, what makes one person happy can make another sad or miserable with their life. Some people prefer the big city because they simply like the Urban landscape or the higher pay they can get from jobs their. Maybe it’s the amount of people that are there and the person who prefers city life is a more extroverted type of person. It’s understandable why you like the country side though, the views can be really pretty and the peace and quiet is an attractive atmosphere for those who prefer such an environment. Also, not all city food is big chain food. A lot of restaurants in the big city are actually of incredibly high quality using imports of the most natural and elusive foods such as the cheese in the video above. It all depends on the restaurant your going to, cities have a diverse environment of many different people from many different backgrounds, and needless to say, fast food isn’t the only thing on the menu for us younger generations. Though, it’s easy to stereotype us as such. We’re just as different from each other and diverse as some older generation people, not all of us prefer iPhones . I apologize if this came off as rude or as me taking offense, but I felt the need to clear the idea that all of us are fast food addicted and obsessed with iPhones. However you most likely wrote your comment with good intentions, and as I stated earlier the appeal of the country side is attractive. Though those are some of the reasons some young people prefer to live in cities.

Because cities often give people a higher quality of life, depending on their resources. If you have a medical condition, you’re more likely to find a specialist in a city. Are you part of a minority of some kind? There’s probably a community of people like you. Plus, rural areas are notoriously underfunded, and underserved. At least, these are all problems in the US. People also tend to leave because small towns can be harder on people who aren’t like their neighbors. It’s why so many in the LGBT community leave their small towns.

Me and my daughter just tried this cheese for the first time today and it was absolutely delicious we especially liked it in our toasted cheese sandwichs. 10 out of 10 and definitely highly recommend for kids as well

I'm from Castilla La Mancha and it really surprised me to see this video on recommendations, I really didn't know foreigners know about Manchego cheese, I thought it was only known in Spain. Also, I don't know in other places but in my town we also make manchego cheese with olive oil, and it's absolutely delicious!

As an Albanian I've been living in Germany for a few years now. I tried different cheese, especially the ones from Austria, Germany, NL or Nordic. For my taste I can say they have no idea how to make a good cheese. But once I tried Manchego I fell in love. It reminds me of my homecountry. There is nothing better than mediterranean cheese

My favorite cheese is Parnassian but after trying Manchego for the first time I’m having a hard time to choose between the two. I really love the creamy texture of manchego so every time I buy cheese I will have to alternate my choice.

No hay ninguna controversia. El queso Manchego tiene denominación de origen La Mancha. Su sabor, textura, olor y todo lo bueno que tiene, se debe al lugar de donde es originario, a la hierva y forraje manchego que han comido esas ovejas,es como el buen jamón, son productos ibéricos y en otros países y continentes se puede hacer algo llamado “ al estilo manchego, en este caso” y podrá estar muy bueno, no lo dudo, pero no dejará nunca de ser una imitación, los sabores tanto del jamón ibérico como del queso manchego son sabores genuinos ibéricos, se pueden imitar, pero nunca serán lo mismo.

I love manchego and is true you can only get manchego from Spain. In Puerto Rico they have a cheese aged 2 years called montebello. It goes threw the same process as manchego but done with raw cow or goat milk. Because it's done in Puerto Rico they say it's not manchego. They also taste nothing alike.
