To be fair, he had a lot on his plate that night. And it seems Buddy was aggressively fan-boying so his welcome was already wearing thin. Any other day it may have gone that way. Heck some other day he may have shot back with something like "I don't have any problem with gadget based heroes, I'm just not in the market for a sidekick." Which would have stung, but may have been easier to take.

Buddy was just a kid who wanted be like his hero, but his hero rejected him and led him to a life of killing real heroes. Only later on Mr. Incredible learns why he killed all those real heroes but the reality is, HE killed them all. That line will always stand out Buddy- "It tore me apart. but i learned an important lesson, you can't count on anyone. Especially your heroes" Mr. Incredible: Yes i was wrong to treat that way. I'm sorry. Buddy: See, now you respect me only because I'm a threat. at the end of the day words hurt, especially how you talk to children.

If Bob accepted syndrome he could've built other tech to help the others like giving dash some boots that can spray oil or giving Violet gadgets that could let her shape her force fields into objects like axes or swords. He could've even partner up with Edna mode to make even better suits. Edna could work on the durability while Buddy could work on the gadgets
