If you don't open up the pasta after it's been stretched you have cavatelli instead of orecchiette. Both are delicious in either a red sauce or a browned butter sauce with mushrooms.

This cookware is amazing but it is not made anymore in this form and was quite expensive. (Between $3500 - $4500) It's made by Ruffoni cookware. Her collection doesn't appear to be in production anymore but the closest thing I can find (and it appears as close as one could get) is the Opus Cupra collection. (You can get the 6 piece set for $1650, and yes the lids count as part of the set.) You'll also need the 8 Qt stock pot for another $925 along with the pasta insert for $140. "Stella", the serving/frying pan you see here is closest (really basically the same thing so far as I can tell) to the 12" serving/frying pan from Ruffoni's Opus Prima line. (I believe it goes for $570 at the moment, but there are more expensive iterations of it available as well in the Opus Cupra line.) So everything said and done you're still at the $3500 dollar mark approximately and may still need more. Having said all of that... It is exquisite cookware of heirloom quality that will be in your family for generations. (No, i do not work for The Pasta Queen nor am I affiliated with Ruffoni cookware in any way. I'm just a shameless kitchen nerd.)
