For anyone watching this, you push in on the bolt and turn clockwise while someone has the pedal pushed all the way in. The bolt is on the clutch. You should be able to see it through the inspection plate.

How do you turn the bolt to adjust the clutch?

The 5/8 bolt head in the center is spring bound. With someone or something holding the pedal down, push the center bolt IN and it will turn. Sometimes you may have to use a pry bar to help by wedging it between your ratchet head and the throw out bearing to get it to push in.
