Thank you Brad for an amazing faculty, holiday party! As one of the privileged view that got to feed Josie for a taste test, it was more fabulous than you could ever imagine. That's awesome, reminds me of my wife's faculty parties we'd have at our house. You realize REAL quick, cooking/warming space is a huge premium. I'd cook for about 120 people (teachers and their families), which would be 3 15lb to 20lb briskets and 40lbs of sausage plus sides. I tried everything to make it easier on me but really nothing was better than just the plain old original way I was cooking. In one of my attempts, I bought a Masterbuilt Electric Smoker (main smoker is a stick burner and tending to it all night was a pain, I wanted sleep), it's large, easily can fit everything, but.... the results sucked. The cool thing is, I realized it was awesome when repurposed as a warming oven. Boom, just like you said, use what you can how you can. Now I love it for what it is. I can put several briskets, pork butts, sausage, sides and keep it all perfect. It maintains a perfect 160 degrees for up to 24 hours, and the cost was extremely reasonable. You learn a lot when cooking for a large crowd.

My first smoker was a Masterbuilt Electric Smoker. Now I have two offsets and the MES is my warming oven. It works great!

I used my master built for the exact same thing. Awesome for heated rests and confit. I just recently loaned it to a friend who is trying to get into bbq, but I just figured out how to get my oven down to 150 so I do the same thing with that

Great vibes. This is the real reason why barbecue (and tasty food in general) is so important: to bring people together and add to the good times. Bradley - I wanted you to know how my Christmas cook went. I BBQd a slab of beef dino ribs on Saturday on my Weber kettle at my shop since I was working that day anyway. 7 hour cook (didn't have any FOGO charcoal). Got them up to temp, let them rest a little, then wrapped them up and into the fridge till Monday. Took them out in the morning to rest on the counter, then into the oven to warm up to serving temp. Protein out of the way, made au gratin potatoes and wok seared asparugus. Added some homemade cranberry sauce and good store bought dinner rolls, and BAM! Christmas dinner without the stress of worrying about your protein. By the way, Bradley is 100% correct when he says beef ribs are almost impossible to screw up. Your temps will vary throughout the cook, but for an uninsulated cooker, a Weber does a great job of keeping things in the zone...my temps were between 250 - 300. Cook to temp (I took mine to 200) and trust the process. Happy New Year, everyone!

I can't wait to buy that model of chud box. It will probably replace my Kamado Joe which means one of my friends might get a free grill! Your family really warms my heart. I didn't get anything like this growing up and it makes me overjoyed to see this is how you grew up. You're a very lucky man.

I know this probably not feasible but u should do a series where you fix mess ups or do a situation where need to have brisket cooked by this time but you started late. That would be pretty educational. Keep up the great work. I just got my clean weiner tshirt

Great video. Can relate for sure cooking with family and friends without any gear. My thermapen always travels with me just in case because that's something I can't go without and my people that recruit me to help in the kitchen never seem to have a quality instant read thermometer. That's just some real world cooking. I've worked over 20 years as a restaurant cook (not bbq, that would be awesome though), it's a different world of cooking. Everything is set up to make the job as easy and efficient as possible and the cooking is as much about timing as cooking skill. You rarely have the luxury of cooking for crowds at home, or as in this case, at someone else's home, where everything is as convenient as in a restaurant so I didn't see you flailing at all. I saw you working with what you had available and solving problems when you came to them. Good stuff.

I cooked for 30 on the 24th. HOLY CRAP was it a job in totality. However your Sous vide/vac seal video was a game changer. I sat on my butt and drank beer while the food held at temp and all the other cooks for side dishes were flailing around like crazy. It was hilarious watching them while I watched football from the couch. Smoked the meats 2 weeks prior vac sealed and threw em in the freezer. Thanks for the tip made me look legendary!

Always glad to hear your back in town enjoying the Ol’ NH. If you’re looking to pick up last minute BBQ cuts in state there is a place in Epping called Hunts point BBQ. They sell cuts as well as have a restaurant. He ships frozen as well. Might be a resource for you to hit on the way up to the parents. He does carry Wagyu packers. He was a KCBS guy at one point. Hope this helps.

Next time you're in the new england area - mcknninons in portsmouth has full packers cut brisket, carls meat market in kittery me also does. Emergency location - any walmart super center, you can usually find a select, sometimes choice excel brisket. I thought I saw you post an ig at the friendly toast.. was like, is he in portsmouth? Lol... smoke on! Great video.

Could you try the smoke trails heated rest at 150 and see if you can implement that to your cooks. Puting a brisker in a Crockpot isn't ofcourse the best BBQ

One time I was cooking for 60-70 people. My buddy put the cooked chicken in the raw chicken tray, and a tornado knocked the power out at the venue where I was planning on reheating the pork butts the day after cooking them. Had to use a gas grill behind one of the rental houses to reheat the pork and ended up tossing the chickens. Turned out great but wow it was stressful
