@@thejamaicancookingjourney bless you Mrs debbie, you remind me of when I was younger i use to watch my mother and grandmother do this... they use to tell me.( Bowy becareful wen yaah dweet nuh mekeh ketch yuh kin.. meaning it would burn your skin very badly.. and when mum and gran use to make dropsy.. Mrs debbie yes your right in what your saying. When times were hard those are some of the things we use to do. I'm Jamaican from st Elizabeth and i still use this method of colouring and flavouring. Much better than the market browning sauce, LOVE YOUR VIDEOS ITS THE BEST IVE SEEN KEEP UP THE GREAT WORK!

Watching from the Bahamas and I am always wondering why jamaican gravy is so good 🤣 it's the brown sugar flavored in the meat....it not only gives color it gives flavor as well...thanks so much I definitely rather this than browning in the bottle that stuff is artificially made.

I'm from the younger generation not Jamaica though. I would use some oil to get it to brown faster & it tastes as good as the sugar alone. It's a similar process to making caramel for flan but much darker.

So We Trinis always burn sugar to make the browning for meat and chicken , Soya sauce is too salty and only used for Chinese food...Chicken cooked by browning method is delicious! 🍗🌶

Exactly! In my Trini house you only used the browning sauce because you didn't know how to properly brown the sugar.

Blessings to you. When I tell people my mother made this from sugar they didn't believe me, I'm in my mid 50's. Stay in little community name Navassa there only a few cooks left like yourself. A true Angel among us Ms. Hazel comes to mind and a few others.Thank you for teaching us so that we may teach the younger one.

Hi Debbie 👋🏽 Thank You 😊 I know this video is old but the mastery is timeless. My mum pass away years ago but I remember her doing this adding the chicken to the hot sugar, I've tried countless times couldn't get the consistency right. I always use bottle browning but I think this is a ART I still wish to practice every now and again as I don't want to forget these things 😊 I tried this recently and it WORKED BEAUTIFULLY, I think previously I tried to rush things that was my mistake. So THANK YOU AGAIN 😘

Shalom. What l did while the sugar was browning l boil salt with chive garlic clove in the water strain the water and pour into the browning and made my own soy sauce

August-18-2020 Ms Debbie, Thank You So Much For Your Patience. You Are A Master Chef. I Love The Way You Cook. This reminds me of the patience that people must have when they are making the Roux/gravy sauce For Gumbo. It took me some time To get it right. I Am a Slow Cooker And do everything by hand. Never Had a food Processor But I think I will invest into getting one now Cause now I get Tired. Lol lol. I Love to Cook all Kinds of Food from Different Cultures. Jamaican Food is one of My favorites. Love Your Cooking My Sister. God Bless You Always.

Ms. Debbie you say it's not a recipe but in fact it is, most dishes are made up from different cultures and even though you said this was something that was done when you couldn't afford the browning or soy sauce this is what people need to see it's a great recipe don't hide those old way habits because the way times are now we may have to go back to them. This looks good I'm going to cook this today. I have made brown stew the other way . Thank you for sharing this if you have anymore please share.

Debbie, in London here, I know burnt sugar to be used in black fruit cakes. The chef's term for burnt sugar is called Black Jack an dot gives the cake a sweet roasted caramel flavour. Those are the black fruit cakes that have a lighter texture than the other tyles of heavy black cakes that are dense.

Yes Debbie, it's only the burnt sugar that we knew about in the country....we had burnt sugar sauce in a bottle most times so it was no problem...it took me personally a lot of trials to get it to the right colour tho.😁

Awesome tutorial… I used Raw cane (unbleached) sugar, and I arrived at the dark brown color very quick ( within 5 minutes after all sugar devolved ).

It doesn’t mean something is wrong if you don’t have browning or soy sauce. I personally don’t like the taste of browning from the bottle it’s to harsh for me. But I like the brown sugar flavor. If I have to brown any meat I prefer the sugar method. It’s the real natural way of cooking with sugar opposed to artificial browning. Thank you for your video.

Yes but one thing though you put back the spoon in the browning after mixing up the chicken with it and then you going to mix both browning together don't you think that it will spoil I think so good morning n love you

It's a Caribbean thing not just Jamaican, I am not Jamaican and we do it, Trinis and others also burn their sugar. My mother in law from Montserrat also burnt her flour for making goat water.

I recently learned not only us Caribbean people do it alone.. The people in new orleans or southeast louisiana cook same way. It make sense, because their culture and cooking is similar to ours.
