Absolutely Great Video! - Question: With 10+ years working as a Waiter, Catering Server, Bartender, Tent & Party Worker - I have thoughts of soon starting a Vegetarian Catering Business - That would also supply the decor for themed event (Tents, tables etc..), I did not go to culinary school but can cook my butt off. -- Any suggestions on how to start ? Do I chef it up or find a "Real" chef? or am I going too big too fast? -- Thanks in advance!!

I’d work at 4 badass vegetarian based restaurants over the next two years only give each restaurant 6 months of your time and save every penny. Give them all you got and launch your business there after!! You got this bro!! I want to hear all about it.

Thank you so much for all three master class video. Very informative and helpful. I want to start my own Spanish food catering business , but i don't know how to charge for for the food. ?Do i also need to be in charge of the drink. ?How many hours do you give to an event?

I normally charge 2/pp on drinks and I charge a price per person on the food. And I charge separate for banquet servers. Normally 250-300 for servers I don’t put a time limit I feel like that is part of the sell when we discuss me catering. I’ll be there as long as needed. I priced out full pans of food on my catering menu but best to keep the food under 40% cost. If ribs cost 20 charge 90. Stuff like that.

Looks like you prepared the food at your restaurant and transported it to the event in Cambros. Do you ever cook or finish off your food onsite in a Crescor?

I really try not to. It’s just way too much work. If there is an oven available I might throw something in there to freshen it up (bacon wrapped dates). But in general I don’t want to be stuck trying to cook in site. Ain’t nobody got time for that.

Hello, I'm new to catering and got offered a catering job for a wedding!!! Well the bride and groom would like lasagna for 150 people, so my question is how many tray's of lasagna will it take to feed that many people?

5 pans 32 servings a pan. If you wanted to make 6 pans for “insurance” that’d work also.

Just lay them all out and assemble them and refrigerate them. Next day all you have to do is pop them in the oven for 40 minutes till temps reach 165

Did i miss something? I did not see anything on how to store during transport, how did you get the food into the venue, where did you put it while setting ? Elaborate more on these big green tote things that you were talking about in the background. You said something about a checklist and video one or two but you didn’t say what goes on this checklist to make sure that you have everything. So I would consider your three part series, not enough information. Not to get started not from a beginners point of view or from a customers point of view. Is it customary on a buffet for the caterer to serve or for the guest to serve themselves?

@cheferickameans4014 ohh they can be found everywhere Restaurant Depot, Sam’s club, Amazon. I just buy the cheap ones and dress them up.
