I can’t find it now but I saw a video on KZbin that looked like it was in another country. They showed everything from buying a pair of quail at a street market to cooking it. They seemed short on clean running water and they dipped the birds in a bowl of water to wet the feathers. This seemed to make hand plucking easier than with dry feathers. If I try it, I’ll update here.

Videos I watched recently used water heated to 160 F to dip birds in to moisture feathers. Don't leave in hot water more than 30 seconds.

I saw one method by a Texas rancher (Independence Ranch) where you pull the head off, place in boiling water for about 30 seconds. Feathers come right off.

I watched a video of a quail operation and they actually used a chicken plucker water bath. They all came out with almost no feathers at all in no time.

It's a matter of preference. If you pull the skin off by hand, you can have it done in 30 seconds if you're fast. Plus the quail is right in front of you, ready to be gutted when it's skinned. The boiler water + rotary plucker method keeps the skin on, but is slower IMO. You can get 3-4 quail into a rotary chicken plucker, but sometimes they're torn apart.

Great job Jonathan!. A third and faster way is to just push your thumb into the abdomen and under the breast plate, then rip the breast off, leaving the back, wings and legs. Discard the skin and feathers of the breast and cook as a skinless breast. And 4th, the survival bush method, in the field, using the same method, reverse the thumb action and remove all the guts and innards as much as possible. Spit the bird and roast over a campfire feathers and all. When well cooked, peel the feather and skin casing away to begin your meal. Then there is also the boiling water method for removing the feathers. . . . There must be a different method for every country/culture in the world. Qual is worldwide :)

@@zombiedad1830 I get it. I do. But like many government regulations it seems like it's a little gray. What happens when you are ready to cook your bird out in the boonies? Do u have too keep that identifying appendage on through the cook in case a game warden comes up out of nowhere? Can a warden check your trash to make sure the leg is still attached to the uneaten remains? I'm not trying to be a troll I really want to know. To my knowledge we dont have that law in CA but I'm gonna make sure after watching this vid. I'm pretty new at this. Also I'm heading out to the hills tomorrow for a quail hunt. Let's hope for happy hunting indeed!

You know quell is already delicious it's pretty much all dark meat but when you stop it with the little bit of ham and swiss or your stuff it with sausage and bell pepper or sausage and jalapeno if you're like me and like spice it tastes a whole hell of a lot better

I would assume it's for identification purposes if you get stopped by MNR out in the field. Kind of like when you go fishing and you need to keep part of the fish so they can identify to make sure you're fishing for what's open and what you're supposed to be!

I believe so they can identify the type of quail if they need to. There are different limits for different types of quail. Not positive though.

Actually, it's Gambel's quail. Look closely at the video and you will see the indicators of a Gambel's quail when he first picks up a bird carcass or the camera focuses on those on the table. It might look like a California quail but the coloring is wrong for that species.

There are six native species of quail are found in North America,The most common species of quail, the bobwhite is often referred to as the number one game bird of the eastern and southern United States. California Quail, also known as valley quail, California quail are the most popular of the five species of western quail. These birds have a curving crest or plume, made of six feathers, that droops forward: black in males and brown for females; the flanks are brown with white streaks. Mountain Quail is the largest quail species found in the United States. Mountain quail possess a unique characteristic of two straight feathers that arch over the back.
