In this video, I take a close look at "Ginchiro", a restaurant in Wakayama, Kishu, famous for its moray eel cuisine!
This time, they processed the biggest moray eel in the fish tank, a 5 kilogram class moray eel.
The technique introduced in the video, "lkejime," originated in Japan, where the fish is immediately killed (brain-dead) and bled to prevent decomposition of the flesh and keep it fresh longer.
"Shinkeijime" is a technique that has recently been gaining attention in Japan, where a special wire-like device (piano wire in this case) is used to destroy the nerve bundles (spinal cord) that run along the upper middle bone of the fish.
This is said to prevent the fish from becoming violent or stressed, to prevent the loss of ATP (the source of energy and flavor in fish), and to prolong the time when rigor mortis begins.
From a religious point of view (Islam, veganism, etc.), people from overseas may think that such a method is cruel and inhumane, but it is a necessary technology to make raw fish such as sushi and sashimi, which the Japanese love, more delicious, and this technology for handling fish meat is unique to Japan and is still evolving.
We eat and live with gratitude and respect for all life, be it animals, fish, or plants, without distinction.
Not everyone, but many Japanese people seem to have this kind of thoughts, ideas and philosophy.
As for the taste of the moray eel dish, it was not a ghetto dish, but a refined and elegant taste like a blowfish, and the meat was surprisingly tender.

那個⋯大家可以找一下資料,很多人都誤會了,這種作法並不會使魚比較痛苦。 第一刀下刀時魚就腦死了,用銳器戳脊髓時魚身的扭動是神經反射,與痛覺無關,魚早已死亡,是神經反射驅動肌肉。 當然畫面還是怵目驚心就是了⋯⋯

It surprises me how calm this eels is when it is taken out of the water and gets prepared to be processed. I sometimes catch them by accident when going fishing, and usually they struggle very badly and are a nightmare to dehook.

People who think it's still alive when he puts the wire down the spine are wrong it's just nerves. Same thing with a person or any animal with a nervous system. You can cut the head clean off and 30 min later hit certain nerves with something and it will make the muscles tense up and move around but you are dead you don't know and can't feel a thing. It's pretty amazing how the nervous system works and the skills these guys have in preparing this is incredible in itself. They make it look so simple and they don't let much go to waste

How would that be torturous at all? The brainstem is already severed at the neck. Any vertebrate is dead at that point. Same. I am an unrepentant carnivore and hardly a PETA activist, but this was really gruesome and hard to watch. The fact that it was still alive after being hung on the hook was too much. Humans may be at the top of the food chain, but we don't have to be so cruel about it.

Why not just cut the head completely off. Then you know it's dead and can't feel anything. The Chef processes it right away, so I don't see any problem (less fresh) with immediately killing it.

this looks like torture i know, even the say it wont feel more pain because brain damage i doubt it, and this way is to keep it alive the longest time possible, you can see the flesh still convulsing when is in the plate, i gues this is why they dont kill it fully since beginning, but i dont know how much is worth it a dish like this fresh at cost of the suffering of the animal, i would not eat or buy this dish.

The ancient Romans used to keep them as pets. A number of Romans seem to have really loved their pet eels. The orator Quintus Hortensius was very was very fond of the eels which he kept in the fishpond of his villa, he is reported to have wept when one of his eels died. Antonia (the daughter of Marc Antony and mother of the Emperor Claudius) is said to have fastened earrings to the pectoral fins of her favorite eel. This was probably a moray or conger eel, since they are the only eels which have pectoral fins that earrings could be attached to.

Fascinating. Thank you. However, I find it extremely unlikely that they would be moray or conger eels. They are both saltwater eels. Hard to see them survive for a long time in a freshwater pond. On the other hand, all eels have pectoral fins. Freshwater eels have them too. I do not see why large freshwater eels could not have earrings attached to their pectoral fins. Could you share your source? Thank you again.

When the first knife hits, the eel was immediately killed. The reason why it was still moving was due to the neural reflex. The cells are still not dead thats why the body was still moving.

By destroying the nerves with wire, the freshness and taste of the meat can be maintained. Although it looks cruel, the moray eel was already dead when its head was cut off. He killed the thing in one chop. It cut the spinal cord of the eel and it has died at that moment. What you see is nothing more than muscle spasms that every animal, even human would do after death. Like how a chicken can still run around with its head gone or cows or some other dairy farm products.

They’re brutal though. Rape of Nanking, Unit 731, pederasty, dirty underwear vending machines, etc etc. Watch the video of one of these guys skinning a frog, turning it inside out, and plating it up for a smiling Japanese lady to eat it while it breathes and looks at her. The frog watches her eat it. Today Japanese people have a polite reputation but there is an ever present steak of brutality in there.

Morey eel is a saltwater long fish it has to come up to breathe oxygen and yes it can be used as food. However its more of an unscale fish like catfish rather that a fish with scales.

They did cut the head off lol, they severed the spinal cord. Cut it completely in two. If they cut the head completely off, it would've been difficult to hang to let the blood drain. But that eel didn't feel any pain once it's spinal cord was cut. The brain had no way of sending pain signals to the body, and the brain had no way of receiving oxygen. So even if the animal was 'alive' after it's spinal cord was cut, which is highly unlikely, the lack of oxygen would've killed with. It literally couldn't feel any sort of pain.

Those are called agonal movements, like you'll see some animals do after the brain is destroyed, disconnected. Chickens are a good example.

"Ikejime" is a technique in which fish are IMMEDIATELY killed (brain dead) while still alive. Nothing about this is cruel, the fish felt no suffering beyond perhaps the initial cut that lasted a second. The fish was not "alive" during these thirty minutes, it died that initial stab.

Translate the pinned comment at the top of the description. The fish was dead when its brain was separated from its body, when you see it wiggling around its just the nerves going on, like anything does when its killed. Hello! Let me clarify for you! the eel was instantly dead after the first stroke with the cleaver (ikejime). all the movements you see afterwards are muscular spasms caused by chemicals released after death. The second step, the one with the wire, is used to enter the spinal cord of the fish and destroy the nervous system in order to avoid further muscle movements that ends up producing lactic acid. The fish prepared in this way will have a quicker death (contrary to the fishing ships that will let all the fish die of asphyxiation outside the water) and the meat will last much much longer and taste much better (because they avoided those chemicals). Hope this clarifies. Unfortunately the practice of Ikejime is not feasable on an industrial scale, due to the higher workload and time consupmtion. It's used in high level restaurants.

The animal had a brain death in the first chop. The body was "alive" but the feel no pain after de first chop, the brain was dead.

it's just the nerves jolting around. the eel is already braindead so it can't feel anything after that, it's just the remaining nerve reflexes doing that

They did cut the head off lol, they severed the spinal cord. Cut it completely in two. If they cut the head completely off, it would've been difficult to hang to let the blood drain. But that eel didn't feel any pain once it's spinal cord was cut. The brain had no way of sending pain signals to the body, and the brain had no way of receiving oxygen. So even if the animal was 'alive' after it's spinal cord was cut, which is highly unlikely, the lack of oxygen would've killed with. It literally couldn't feel any sort of pain.

기본적으로 생선 요리는 머리 뒤쪽을 칼로 치는것으로 어느생선이든 우리나라에서도 다 같은 방법으로 죽입니다. 다만 이영상에서 나오는 시메(신경죽이기)는 우리나라에선 하기도 하고 안하기도 하는데 이미 머리친 순간부터 머리 아래부분에 대한 통각은 끊어집니다 신경을 철사를 사용하여 건드리니 몸체가 움직이긴 하지만 엄밀히 말하면 우리나라 생선회는 머리치고 몸 바로 해체하니 별반 나을거도 없습니다. 생선 다 해체하고 나면 생선살과 부산물들은 한참 시간이 지나도 뻐끔뻐끔 살아있지요.

There is something called "muscle memory." Meat can continue to move even when the animal is dead. I don't really know why this happens, but there is information about it on the internet.

Moray eels only have nerves in their heads but moray eels have a secondary ‘heart’ in their tail, just behind the last vertebra. This helps to pump blood back up to their real heart. That's why hou make a cut in the tail. The first cut didn't kill the eel at all it died from bleeding out
