Dude. I got this big pack of thick pork chops from Costco and could not figure out how took them. Even the instant pot made them dry. Tried this recipe, and they came out amazing!!! Thank you!

My daughter gave us very thick pork chops from a half-a-pig she purchased from her farmer friend. Since I had never cooked one that thick I decided to check out KZbin for some instructions. I read several and decided tonight I would try your recipe. I hate dry pork and I liked that you gave cooking time per inch. Plus I like cooking with my cast iron skillet. The Stay At Home Chef ...they were delicious. Moist and flavorful. I followed your directions to the letter and even though I was concerned that the salt might overpower the taste..it didn't. I just purchased a digital meat thermometer and that really helps make sure you don't under or over cook. I look forward to trying some of your other recipes.

Just Salted up 1 1/2 inch pork chops and seared them on the Gorge Foreman Grill for 3 minutes. Baked them (in cast iron skillet) for 15 minutes! John Brown, Heavenly Pork, I even ate the fat!

My wife says my chops are to die for. Pat dry, egg wash bread with a mixture of corn meal/flour/spices ( garlic powder, onion powder, thyme, salt, pepper) and fry in bacon grease and EVOO on high for 1 minute a side, turn heat down and fry for another ~ 10 minutes flipping a couple of times.

I agree with the 145 degree internal temp. But I have found that allowing the chop to cook to that level will, after allowing the chop to sit covered for 15 minutes, raise the internal temp by about 15 degrees. 160 degrees tends to dry the meat too much. I remove the chop from the oven when an internal temp of about 130 degrees is reached which will then rise to about 145 degrees, which is tender, safe, juicy and perfect.

You can also pour lime juice over them and let them sit to room temperature. Wrap them in aluminum foil after seasoning . Cook on grill at around 300 for 20 minutes. Turn flame on high to around 450 and sear both sides a couple minutes. Remember to keep some lime juice in the wrapped chops when doing step 1. Yours looks delicious 😋

I do these in my pellet grill right along with corn on the cob, and rosemary garlic new potatoes- at 350 degrees they all finish around the same time.....sorta like a sheetpan meal. We call those chops "Iowa Chops".....because we're from Iowa....and you can't have them without fresh sweetcorn on the table. The sweetcorn- I just soak it in water for an hour wtih the husk on- then put it on the grill for an hour to roast- the silk comes right off with the husk and you can grill it a little more to char some of the kernels on the cob.

I marinade first for about 3-4 hours. Sea each side on medium high heat 2-3 minutes. Never fails me. Love the center cut for all the fat.

I followed your other recipe for baking pork chops in your other vid and I tweaked your instructions a little bit. It turns out that my little tweak was the same as the method in this vid (searing the chops in a cast iron skillet before placing them in the oven)! Chops came out terrific. Thanks for the recipe!

I'm about to try these on my Weber q1200. I've made them on my charcoal grill and they came out soooo good. I use my gas grill in the fall and winter because I lose daylight early. I'll be grilling them using a cast iron griddle.

I appreciate the five minute increments of time you described, but are you including the two minutes on each side on top of the stove. After cooking this chop for two minutes on each side to leave it in the oven at 400° for 10 to 15 minutes seems too long.

I believe she is. If you think it’s too long pull the chop out of the oven and then take its temperature. If it’s below 140° then cook it for longer. I would pull it out of the oven at 140° and let it rest. Carryover cooking should take it to 145° after five or so minutes of rest.

Pork absorbs flavor better than any other meat. It is perfect for spices. This is an excellent recipe I'll try. Meanwhile, here is a spice I used for thick pork chops tonight that dressed them up: McCormick's California Style Coarse Grind Blend Garlic Powder w/ Parsley. HEAVEN!
