I have been looking for this video for forever. My past attempts at brisket cooking weren't complete failures, but they didn't measure up. You explained the process so well, and I like your sense of humor. I'm a new subscriber, looking forward to all I can learn from you!

Thank you so much for this vid. I saw an over roast brisket recipe that instructed to cook for four hours....but didn't account for beginners starting off with 10 lbs of meat. I almost went with their directions w/o taking account for weight. You've got a fan.

I was having a party for my mother, she wanted a beef brisket. I had no idea how to make a brisket and there are so many recipes online. I found your video, to prepare a brisket. I followed your instructions and it came out perfect. We had other meats, I thought for sure i would have so much left over.. but to my surprise I had to brisket left over. People kept asking me for left over brisket, but i had nothing left. So, i gave them your website and told them to go home and make it. Thank you!

I've had great success smoking beef brisket in my Bradley Digital. The key is low and slow and boating the brisket about half way through. At the end, after it is done (195°), I FTC for several hours. Foil-Towel-Cooler. Works great.

This is the BEST recipe for baked brisket. So soft and moist, it literally melts in your mouth. Use the sauce and seasonings of your choice. Follow the directions. I don't let it cook for another hour after it jiggles, it dried mine out. This is the only way I cook brisket now. Getting to old to set up the smoker. It comes out that good though.

Thank you for mentioning how to tell if the brisket is done towards the end of the video. The "bouncy" nature of the cooked brisket comment was really helpful, I almost under-cooked mine. Thank you so much.

I agree about P from friends. I had to write this; you are soooooo right this is the real thing the real brisket I've watched a few videos here but they all sort of have veggies; nothing wrong with that but that would be like a roast beef, this one is grrrrrrrrrrrrrrreatt I have a huge on that I am going to bake now, hopefully will taste like yours.

I don't know of another name for it, but I know brisket is used in Korean and Vietnamese dishes so I would think you'd be able to find it in Japan, too. If you find it, you can also simmer it for a few hours until tender. Simmering is much faster than roasting.

I'm in Tx too & grew up on Brisket-both oven & smoked. You did a great job 1st of all, but most of the briskets I find r 12-18lbs. Also S&P only, r because brisket doesn't need seasoning...it's that good a flavor....next...in the oven don't try less than 325 deg(to shorten cooking time), (that woul do ur 4-8 lb.er in a few hours w/1/2 cup of water & be tender) (250-275 is for smokers & 10-14 hrs.)

If you cook it in a covered pot or dutch oven, save room for a couple of ramekins, that you can put a liquid smoke/water solution in. As the solution steams, it adds a smoky favor to the meat. It's not super intense, but better than nothing.
