Good job Chef Henry! Normally when using salted fish, I believe the process is to soak it first to get rid of a lot of the salt as well as to rehydrate it. Is it ever possible to purchase salted fish that has already been soaked and hydrated for ready use? Either way, keep up the good work! Your grilled Jerk Chicken as well as your grilled fish looked so very yummy! I am a Chef, who graduated from Me Cordon Bleu many years ago. But I am always watching others and their techniques.😉

Thank you and that's an amazing comment coming from someone who has such a high degree. Unfortunately there is no way of buying that type of salt fish. I boil mine to get the salt out and rehydrate it. A lot of work but so worth the taste. Please share the video with friends and family. 😁

You put the stove on simmer... so between 2 and 4, put on the pot lid and let the steam cook it
