You took out the tamlle?! But why?! The tamlle (the green part) is FULL of wonderful rich lobster flavor. And its a nice creamy consistency, perfect for this dish. I know it doesn't look the best but if you're making a creamy sauce to go in the lobster why take out the natural creamy lobster ????

Do you like any lobster meat with your cheese? As a chef, don’t use Parmesan- only gruyere, it will no doubt be tasty - but there is way too much cheese for me, it looks like McDonald’s started doing a lobster / cheese dish Also grill with fresh breadcrumbs- you won’t regret it
