Ingredients:
■Teriyaki mayo fried tofu
-1 block firm tofu
-cornstarch (or potato starch)
-2 tbsp sugar
-3 tbsp soy sauce
-2 tbsp mirin
-1 tbsp sake
-green onions (for topping)
-mayonnaise (for topping)
■Garlic & butter fried tofu
-1 block firm tofu
-cornstarch (or potato starch)
-1 clove minced garlic
-1 tsp sugar
-1.5 tbsp soy sauce
-1.5 tbsp mirin
-black pepper
-10g butter
-green onions (for topping)
-sesame seeds (for topping)
■Fried dashi tofu
-1 block firm tofu
-cornstarch (or potato starch)
-200ml water
-2 tbsp soy sauce
-1 tbsp mirin
-1 tsp sugar
-1 tsp bonito powder (I use “hondashi”)
-green onions (for topping)
■Ginger & soy sauce cold tofu
-1 piece soft tofu
-green onions
-grated ginger
-soy sauce
■Sesame & salt cold tofu
-1 piece soft tofu
-sesame seeds
-salt
-green onions
-sesame oil
■Kimuchi & seaweed cold tofu

If you can’t find mirin or sake in your city, you can substitute them like this👇 For 1 tbsp mirin use either: 1 tbsp sake + 1/2 tsp sugar or 1 tbsp white wine + 1/2 tsp sugar For 1 tbsp sake use: 1 tbsp mirin or 1 tbsp white wine It won’t be exactly the same, but still works 😋

Nice. I've been lucky that we have Asian grocery store that carries Mirin, but to know the substitutes work for me too.

I accidentally got some really terrible Americanized mirin one time-so, I marinated some chicken with browned onions in the fridge with it for a bit. Then I braised it all together until it browned nicely. Now everyone keeps asking for my ‘drunken chicken’ ;)

The other day, I was shocked to realize that some American people regarded Tofu just as a substitute for meat. I had never thought that way. For a Japanese, Tofu is an independent ingredient for cooking, just like a meat/fish/vegetable and never a substitute. Very interesting.

I think it's common throughout the West. Meat is very important culturally here and people will eat it with almost every meal. For vegetarians, before we started making alternative proteins such as Quorn, they needed a centre piece of the dish that could be done instead of meat. Tofu is very versatile and is good with sauces and marinades so it can replace meat in a lot of dishes here.

I was shocked too, even though I don’t eat meat. It’s always been an accompaniment to REAL food. I do use it to make ‘egg salad’, though. And everyone thinks it’s weird that I add curry powder until they taste it. Hey, that’s just how my family makes egg salad 🤷🏽

@@duck6100 thank you for explaining in the most direct and peaceful way possible! I think it’s normal, for people who have been introduced to tofu at a very old age, to take some time before considering it as a full ingredient, not just a replacement. 😊

not only is it a common meat substitute but its used to substitute so many different animals products because of how versatile the texture is like scrambled eggs. and honestly in america tofu is most common among vegans and vegetarians surprisingly enough most people view tofu as a bland meat substitute and dont give it a chance, but tofu is also very finicky but when prepared properly can taste and feel super similar to meat therefore most people who have had bad tofu experiences just didnt have it the right way leading to the tofu stereotype

I live in Mexico and there is a Japanese restaurant that serves Agedashi Tofu and I order it every time we go which is a lot, so thanks to you, I can now make it anytime I want!!!! I love tofu and I love Japanese food!

I've noticed a lot in east asian cooking that they use sugar as seasoning for savory foods, like meat and even tofu. I thought it was strange until i tried it myself and it actually tastes really good.

An amazing small thing is sugar + tomato. Any sauce with tomato in it works so well with just a tiny amount of sugar

My bf and I tried all three fried tofu’s today !! They were all so delicious ! We ranked them from our favourites: 1) Teriyaki Mayo This one was sweet and savoury ! I have a bit of a sweet tooth and I loved this one so much ! 2) Dashi tofu This one was so good too !! It was really smooth and yummy 3) Garlic and butter tofu This was our least favourite because it felt like we needed more sauce with it. I’ll have to triple the sauce for this one next time !

I have tried the first and fourth recipe and they are sublime. I substituted dried shiitake mushrooms for the bonito flakes to make the Dashi tofu vegan. It taste just like my favorite restaurant, which I no longer need to spend money at to enjoy my favorite dish! I am in heaven thanks to you :-)

Teriyaki Tofu is the bomb! So yummy and easy to make. I added a bit of chili powder to make it slightly spicy, plus topped it with a bit of Togarashi. *chef's kiss* Definitely a keeper. Thanks for sharing!

I sent this to my partner labeled ‘Hubby friendly recipes’ 😁. Also glad you included the hiyayakko-I always get weird looks from people until I make it for them to try; then they can’t get enough of it! I also do the same with the egg white leftover from using the yolks in bao

I love tofu so much As a picky eater, when I don't like the side dishes I always cook tofu Any kind of tofu dish I like hehe I even get in trouble for finishing all the tofu in our home I even convince my brother who doesn't like eating tofu to eat one, and he did but he only likes the deep fried one with garlic breading flavors My fave is tofu with soy sauce, sugar, etc heheh It's also very easy to cook and perfect for school hehe

The teriyaki mayo tofu was good and simple to make. It has a sweet flavour and the mayo makes it creamy in addition adding the onion on top for garnish gives it a delicious fresh taste. Highly recommend.

As Southeast Asian and Indonesian... Tofu or in my country we called it Tahu is one of my favourite ingredients. We also have many tofu based recipe. And I just realized it from reading other comments from this video that in US or any non Asian country, Tofu is just replacement or just vegan friendly ingredients and they just saute it or just eat it. But here in Asia we embraced tofu... And in Indonesia we also has Tempe another ingredients from soybeans

For the garlic press problem - run a dull knife across the bottom to release the garlic easily! These recipes look delicious to try!

The fried dashi tofu really got me out of a pinch. Reached the end of a long day and can't have meat for religious reasons, and this was just what I needed to use up that tofu in the fridge.

When you use garlic masher try to slice it off with the knife :) it should be easy and super quick!

I’ve made 2 so far from this list and members of my family who hate tofu actually enjoyed it for the first time! I also love Japanese food and this helps me make more delicious dinners. I do have one question. For the fried tofu, I found that my tofu soaked up the cornstarch too quickly and they had a very thick layer when frying. How would I make it better?

hi, be sure to dry it very well or as much as possible , I like to press it to get outvas much water as possible and towel-dry it this way it won't absorve so much starch.

Hello, noticed use of bonito powder and mirin in several vids. Are these staple for most japanese recipes? Really want to recreate most of your recipes and I'm trying to convince my boyfriend to add those 2 ingredients as staple in our kitchen hahaha :D

Yes, you can! Actually we use potato starch in Japan. I use corn starch because I can't find potato starch in the city where I live 😢 I should have mentioned it in the video. Thank you for asking 💓

I'm very curious about cooking tofu! I've never done it before and I'll try some of these easy recepes soon. By the way! I have the same garlic masher and I use the non-cutting edge of a knife to get all the pieces easily ^^ Gracias por el vídeo!

Hi, thank you for the comment! I use cooking sake. You can find it in the Asian supermarket. You can also use regular sake and it doesn't have to be a high quality one 😊

I'm so glad I've found your channel -- I love how simple and accessible the recipes are for people (like me 🥲) who don't have access to a lot of Japanese ingredients! I've made your teriyaki mayo fried tofu twice this week, and it's so good! We don't use mayonnaise much as a sauce where I live, it's really only used as a spread on sandwiches, but it's such a nice flavour in this dish, and I'd love to use it more creatively in other dishes as well. I have heard that the mayonnaise sold in Japan is much better than what we have in America and Europe, do you think it's worth ordering some to try it out? Thanks for putting so much work into your videos, they're all so lovely🧡

Thank you so much for the sweet comment 💓 I’m glad you liked the fried tofu. Japanese mayonnaise has a rich egg flavor, so yes I’d recommend you to try it someday! If you get it, you can also try dishes like okonomiyaki and yakisoba. They also go well with the mayonnaise 💐

I've managed to cook the most amazing teriyaki mayo tofu that tasted better than the restaurant one. Here are some tips. Ingredients matter. Don't try to substitute, use ingredients of Japanese origin for the sauce. Get yourself real mirin (hon mirin) - 14% alcohol, no salt, and is actually the product of fermented rice. Do some research on what hon mirin really is. Kewpie Mayo. * Use firm tofu. Put something heavy on top to really squeeze water out. No need for a paper towel at this step if water has where to go. In the end, wrap in a paper towel and gently squeeze. Tofu should feel sticky a bit! * No need to absorb oil while frying tofu. But before adding sauce, use paper towel to absorb excess oil on the pan. * Pour sauce onto a hot pan, hotter than in the video, so that sauce burns a bit. After about 30 sec, reduce until sauce thickens on low heat. The sauce should be thick.

TIP: You had asked how to better get the pressed garlic out of the garlic press & I always use a knife! Even if not all the garlic gets out of the press, Ill take the thin garlic skin thats left & chop it up with the same knife ❤

I dont use a masher, not that great honestly (my opinion of course you do you). Usually if I want something quick and spicy I use a microplane or if i want it more tame and smoother/nicer consistency I use a mortar and pestle (also great for provencial aioli). Also just finely dice on occasion - knife skills are life.

Tofu is made of soya bean.. but you can substitute it with paneer if you don't find it

Americans have this bizarre notion that tofu is only useful for vegetarians looking for a meat substitute. It's nice to see some dishes that highlight tofu, and let it stand as an ingredient on its own. (To be fair, the "Tofu is a meat substitute for vegetarians" mindset is slowly fading away, but very, very slowly.)

Hi! Mirin is a Japanese seasoning, a kind of rice wine. You can buy it in Asian supermarkets :)

Honestly there's no point to coating the tofu and frying it in cornstarch as putting the sauce over it will dissolve the cornstarch coating and just make it slimy. Unless...one likes that. You do better with flour if you want braised tofu. Or skip the flour/cornstarch and just braise it without coating.

I made all three fried tofus and still found them to be really crispy !! I added the sauce after the skin formed and fried it until golden brown.
