Rapini is an extremely healthy vegetable and happens to be one of my favorites!! Ironically, there are many people who have not tried rapini, nor are even aware of it, or how to cook it. Rapini is full of nutrients and could be considered a superfood. Add some virgin olive oil and garlic, and now you have a winning trio, packed with flavor and health benefits.
Ingredients
► 1 head of rapini
► Virgin olive oil
► 2 cloves of garlic, sliced thin
► Salt to taste
► Optional - hot chiles or hot chile pepper
Directions
► Cut off stems of rapini (approx. 3 inches off the bottom)
► Cut the remaining rapini, wash it and spin dry in a lettuce spinner
► In a pan, drizzle virgin olive oil (enough oil to cover bottom of pan)
► Slice garlic into thin slices, add to pan, and cook on med. for ~1 min
► Add rapini to pan, cover with lid, and cook on med. till rapini wilts (~4 - 5 minutes)
► Toss rapini in pan, coating it with the garlic oil, add salt to taste, and put stove to low
► Cook for another 1 - 2 minutes with lid on
► Remove and serve
